Post-packaging pasteurization

A method of pasteurizing food in a sealed container is provided, the method comprising (i) submerging the container in a first water bath, and (ii) heating for a time and at a temperature effective to kill, inactivate or reduce bacteria to safe levels, wherein the first water bath provides a pressure in excess of atmospheric pressure, so that the increase in internal pressure in the container upon heating is offset by the external pressure of the water, then (iii) cooling the container. Further provided are systems for carrying out said method, and food products pasteurized thereby.

CONTAINER WITH THERMALLY FUSED DOUBLE-SEAMED OR CRIMP-SEAMED METAL END
20190177033 · 2019-06-13 ·

A container includes a metal end applied and sealed to an all-thermoplastic container body by a crimp-seaming or double-seaming operation. The metal end has an outer curl joined to a chuck wall that extends down from the curl. One or both of the inner surface of the container side wall and the outer surface of the chuck wall has/have a heat-sealable material thereon. The metal end is crimp-seamed or double-seamed to the container body and the heat-sealable material(s) are heated to soften or melt such that the interface between the chuck wall and the side wall is fused. The interface is oriented along a direction relative to internal pressure exerted on the metal end such that stress on the interface caused by the internal pressure is predominantly shear stress.

Method for Preparing Food
20190159486 · 2019-05-30 ·

A method for preparing food having at least a solid food component. The method comprises, during a high-temperature, short-time stage (HTST stage), cooking a surface of the solid food component at a temperature (HTST temperature) of greater than 140 C. The method further comprises placing the food into packaging to form a sterile food package containing the food. The method also comprises, during a low-temperature, long-time stage (LTLT stage), cooking the sterile food package at a temperature (LTLT temperature) of between 40 and 100 C.

PASTEURIZING DEVICE AND METHOD FOR OPERATING A PASTEURIZING DEVICE

A method operates a pasteurizing device and a pasteurizing device pasteurizes foodstuff in sealed containers. The pasteurizing device includes a treatment area configured for temperature treatment of the foodstuff in the containers with at least one heating zone, a conveying system for conveying the sealed containers filled with foodstuff through the treatment area and an irrigation device configured for dispensing a temperature-controlled process liquid into the at least one heating zone. The pasteurizing device further includes at least one feed device configured for introducing at least one treatment chemical for container-treatment in gaseous or aerosolized state into the treatment area.

SYSTEM FOR PREPARING INSTANT RICE WITH TASTE, NUTRITION AND TEXTURE OF CAULDRON RICE

The present application relates to a system for preparing an instant rice, an instant rice prepared by using the same, and methods of preparing the instant rice.

METHOD FOR PREPARATION OF INSTANT FOOD HAVING IMPROVED TASTE, NUTRITIONAL VALUE, AND TEXTURE

The present application relates to a method for the preparation of an instant food and an instant food prepared according to same, wherein even when the instant food is prepared using raw ingredients and liquid sauces that are susceptible to microbial contamination or difficult to sterilize, the amount of microorganisms in the prepared instant food is lower than a threshold value, and thus a sufficient sterilization effect can be achieved, and the problem of reduced quality that may cause due to strict sterilization does not occur, and thus an instant food having excellent texture and taste can be provided.

Method and device for treating food and/or containers for holding food

A method and a device for treating food and/or containers for holding food treats the food and/or containers in at least one treatment zone by a process liquid, wherein the process liquid is at least partially recirculated into the treatment zone or the treatment zones after completed treatment of the food and/or the containers. During continuous treatment at least some or all of the process liquid is used per time unit to form at least one stream of the process liquid, the formed stream is filtered by at least one membrane filtration system, and a filtered stream is at least partially fed back into an element holding and/or conducting the process liquid and/or into a treatment zone.
