Oven skin packaging process
The invention relates to a vacuum skin food package for use in a conventional oven and more particularly to a food package able to withstand conditions up to 200° C. comprising a thermoplastic lid film which is free of polyester and contains crosslinked EVA.
ROASTING AND GLAZING APPARATUS
A roasting and glazing apparatus includes a roaster, an agitator mounted within the roaster bowl for mixing a mixture of nuts and sugar during a roasting or glazing operation, a heater controlled to heat the roaster bowl during the roasting or glazing operation, and a cover removably mounted to the roaster bowl. The cover includes a reservoir for receiving water from a user and restricting water flow from the reservoir into the mixture of nuts and sugar in the roaster bowl. The cover and the roaster bowl together define a vent on a side of the cover opposite the reservoir. The vent is configured to direct steam out of the roaster bowl in a direction away from the reservoir.

Method and cooking apparatus for controlling a food cooking process
The present invention relates to a method and a cooking apparatus for controlling a process for cooking food. The method comprises the steps of: detecting an initial temperature of the food; evaluating weighting factors of more than one temperature ranges according to the initial temperature, the more than one temperature ranges and preset cooking parameters of each of the more than one temperature ranges being predetermined; and controlling the cooking process based on the evaluated weighting factors and the preset cooking parameters. With this configuration, the cooking setting (temperature, time etc) can thus be determined based on the detected temperature ranges as well as the eliminated temperature ranges, so that possible detection inaccuracy can be eliminated to a large extent.

KITCHEN APPLIANCE AND METHOD FOR ROASTING MEAT
A kitchen appliance is described. The kitchen appliance has a food preparation chamber including a fan, a heating element, and a humidifier; and a controller for implementing a program for roasting meat. The program includes a steaming stage to steam the meat during which the controller, for a first period of time, controls the humidifier, the fan, and the heating element to generate a first wind speed within the food preparation chamber and keep a temperature within the food preparation chamber between 60-70° C.; a drying stage to dry the steamed meat after said steaming stage during which the controller controls the fan and the heating element for a second period of time to increase a wind speed and reduce a humidity; and a roasting stage to roast the dried meat during which the controller controls the heating element for a third period of time to keep the temperature between 140-160° C.

SYSTEMS AND METHODS FOR VACUUM COOKING
The present technology is directed to a system for vacuum cooking a non-animal protein, High Moisture Extrusion (HME) food product using steam injection. In various instances the system may comprise: a vacuum cooking food processing system. In various instances the vacuum cooking food processing system may comprise a vacuum tumbler. In some embodiments, the vacuum tumbler may comprise: a vacuum sensor; a temperature sensor; a vacuum valve; a steam injector; and a dosing nozzle.
GRILL BASKET
A grill basket including a basket portion having a bottom with sides extending upwardly and outwardly therefrom. A handle is removably engageable with one of a plurality of engagement assemblies that are provided on different sides of the basket portion. The handle is selectively engaged with different engagement assemblies in order to change the orientation in which the grill basket is able to be used. The grill basket further includes one or more removable dividers that are movable between a storage position and a use position. In the storage position the one or more dividers are located proximate one or more sides of the basket portion and an interior compartment of the basket portion is substantially the same size as when the one or more dividers are completely removed from the basket portion. In the use position, the dividers are placed to divide the interior compartment into smaller compartments.
