METHOD FOR REMOVING GLUCOSINOLATES FROM OILSEED MEALS

A process to remove the glucosinolates of oilseed meals, such as Brassica carinata oilseed meals, is provided. In one embodiment, exogenous myrosinase is used to convert the glucosinolates to volatile isothiocyanate compounds, which can then be removed under conditions of mild heat and negative pressure. In another embodiment, heat and pressure are used to remove glucosinolates from Brassica carinata oilseed. The processed meals may contain less than 80% of their starting levels of glucosinolates and may be suitable for use in various applications, including as animal feeds.

METHODS FOR CHROMATOGRAPHIC PROTEIN EXTRACTION AND PURIFICATION

Disclosed herein are methods and compositions for isolating a protein fraction from a potato sample. The methods include adjusting the potato sample containing the protein fraction to a pH of about 4.0 to 5.2; and loading the potato sample onto a sulfonated epoxy resin, wherein the sulfonated epoxy resin comprising Formula (I) is adjusted to a pH of about 4.0 to 4.5. The methods also include washing the sulfonated epoxy resin and eluting the protein fraction.

METHOD FOR REDUCING SULFUR-CONTAINING-COMPOUND CONTENT OF VOLATILE SUBSTANCES FROM FRIED FOOD

An object of the invention is to provide a method for reducing the sulfur-containing-compound content of volatile substances from fried food.

The invention provides a method for reducing the sulfur-containing-compound content of volatile substances from fried food, wherein a foodstuff is fried using an oil and fat composition containing an edible oil and fat and the following component A. Component A: One, two, or more oils and fats selected from (1) to (5). (1) A roasted oil, (2) a decoction oil, (3) an n-3 edible oil and fat, (4) an overheated oil, (5) olive oil.

SWEETENING COMPOSITION AND PREPARATION METHOD AND USE THEREOF
20210352943 · 2021-11-18 ·

This application relates to a sweetening composition and a preparation method and use thereof. The method includes steps of obtaining mesophyll fragments of Rubus suavissimus S. Lee, extracting with water as a solvent, removing phenolic hydroxyl-containing components, concentrating, purifying, and water-phase crystallization to obtain a sweetening composition. The sweetening composition is white in color, with unobvious bitterness astringent taste. The sweetening composition contains 50% to 99% of Rubusoside based on a dry weight, and has an absorbance of less than 0.4 at a wavelength of 270 to 370 nm after being dissolved and prepared into an aqueous solution (with a solid content of 1%, w/w). By removing bitter glycosides and phenolic hydroxyl-containing components, this application makes the flavor of the sweetening composition better. In the preparation process of the sweetening composition of the this application, only purified water is used and no organic solvents are used.

PROCESS FOR PRODUCING PROTEIN PREPARATIONS FROM SUNFLOWER SEEDS AND PROTEIN PREPARATIONS PRODUCED THREFROM
20220007679 · 2022-01-13 ·

In a process for producing protein preparations from sunflower seeds a protein-containing flour made of dehulled and deoiled sunflower seeds preferably having a protein solubility in water at pH 6 of >15% by mass and/or at pH 7 of >25% by mass relative to the protein content in the flour is subjected to at least one extraction step with water at a pH of more than 4 and less than 9 to obtain a liquid phase as an extract and a solids-rich phase as a raffinate. Before and/or during the extraction step the oxygen concentration in the water is reduced to a value<7 mg/l and/or an oxidation activity is reduced by addition of antioxidant components to the water.

After separation of the extract and the raffinate the extract is concentrated and/or dried to obtain a protein preparation having a high protein content. The process makes it possible to obtain qualitatively high-grade and sensorily appealing light-coloured protein preparations having a protein content greater than 75% by mass.
