METHOD FOR CONCENTRATING OR DEHYDRATING LIQUID FOOD PRODUCTS, USE OF ELECTROSPRAYING TO CONCENTRATE OR DEHYDRATE LIQUID FOOD PRODUCTS AND FOOD PRODUCT
A method for concentrating or dehydrating liquid food products is provided. The method comprises using an electrospraying technique on a liquid food product, the electrospraying technique including the application of an electrical potential, comprised in a range between 20 kV and 50 kV, on the liquid food product using an injection needle, obtaining a concentrated or dehydrated product as a result, the distance between said injection needle and a collector used for collecting the concentrated or dehydrated product being between 10 cm and 50 cm. The invention also relates to the use of an electrospraying technique to concentrate or dehydrate a liquid food product.

RE-USE OF EVAPORATED PRODUCT IN THE PREPARATION OF PLANT-BASED LIQUID FOOD CONCENTRATE
A system for producing a plant-based concentrated liquid food product includes a mixer configured to prepare a plant-based slurry by mixing at least plant material and water. The system includes a separation unit configured to separate the slurry into a solid portion and a liquid portion. An evaporator is configured to evaporate water from the liquid portion, to produce at least one evaporated portion that comprises evaporated water, and at least one concentrated portion which is used to form the plant-based concentrated liquid food product. A return conduit is configured to convey the evaporated portion from the evaporator to the mixer or to another mixer which is configured to prepare a subsequent plant-based slurry by mixing at least plant material and the evaporated portion.
