The present disclosure relates to a solid-fuel cooker, such as a barbecue, comprising: a body defining a chamber configured to act as a firebox for combustion of solid fuel, such as charcoal or briquettes; a fuel support structure for supporting the solid fuel in the chamber; and an ignition system for igniting the solid fuel supported by the support structure. The ignition system comprises at least one electric heating element mounted to the body and located in or adjacent to the chamber for heating the solid fuel supported by the support structure, the at least one electric heating element configured to be switched between an electrically energized (i.e. switched on) state and an electrically de-energized (i.e., switched off) state. The at least one electric heating element is configured to transfer heat to the solid fuel supported by the support structure to ignite the solid fuel when the switch is operated to the electrically energized (i.e. switched on) state.

A combustion chamber sized to receive a quantity of solid fuel is in fluid communication with a cooking region of a grilling appliance. A control system is operable in at least a smoke mode and a temperature mode. When operated in the smoke mode, the control system operates a fuel delivery system and draft inducer in accordance with predetermined fuel and combustion air delivery schedules. When operated in the temperature mode, the control system operates the fuel delivery system based on a feedback signal derived from the temperature of the cooking region. A user interface operatively associated with the control system allows a user to operate the grilling appliance in either of the smoke mode or the temperature mode.

Pellet grills and associated methods of operation are disclosed. An example pellet grill includes a lid, a cooking chamber, an engine, and one or more processors. The lid is movable between a closed position and an open position. The engine is configured to output heat to the cooking chamber. The one or more processors are configured to detect a closing movement of the lid. In response to detecting the closing movement, the one or more processors are configured to command the engine to operate in an increased output mode that increases the heat output of the engine.

At least two longitudinally extending air inlets are formed in the space between a first longitudinal edge of at least one of the burn chamber walls and a second longitudinal edge of another burn chamber wall. Each of the longitudinally extending air inlets tangentially directs an entry of air into the interior burn chamber to induce an interior swirl of air in the interior burn chamber. The interior swirl of air in the interior burn chamber causes a flame of a combusting solid fuel to swirl in the interior burn chamber.
