METHOD OF OPERATING AN INDOOR SMOKER
An indoor smoker includes a smoking chamber, a smoke generating assembly for providing a flow of smoke into the smoking chamber, a chamber heater for regulating a chamber temperature in the smoking chamber, an air handler for urging the flow of smoke from the smoking chamber, through an exhaust duct, and out of a discharge vent, and a catalytic converter for reducing emissions within the flow of smoke. A method of operation includes turning off the smoke generating assembly, switching to a cooking process where the smoke generating assembly is off and the cooking temperature is at or above a temperature threshold (e.g., 170 F.), and operating the air handler and the catalytic converter after the smoke generating assembly has been turned off and in response to determining that the cooking process is still being performed in the smoking chamber.
Pellet grills
Pellet grills and associated methods of operation are disclosed. An example pellet grill includes a waste collection drawer and one or more processors. The waste collection drawer is movable between a closed position and an open position. The one or more processors are configured to determine whether a duty cycle of the waste collection drawer has violated a threshold corresponding to a predetermined usage expectancy of the waste collection drawer. In response to determining that the duty cycle has violated the threshold, the one or more processors are configured to generate a notification indicating that the threshold has been violated.
Dual mode solid fuel grilling appliance
A combustion chamber sized to receive a quantity of solid fuel is in fluid communication with a cooking region of a grilling appliance. A control system is operable in at least a smoke mode and a temperature mode. When operated in the smoke mode, the control system operates a fuel delivery system and draft inducer in accordance with predetermined fuel and combustion air delivery schedules. When operated in the temperature mode, the control system operates the fuel delivery system based on a feedback signal derived from the temperature of the cooking region. A user interface operatively associated with the control system allows a user to operate the grilling appliance in either of the smoke mode or the temperature mode.

An example oven can include: a main body defining a cooking cavity; a front portion of the main body defining a front opening for receiving a food item and acting as an air vent; a baking stone positioned to support the food item; a tray assembly including a grate positioned in the main body; and a gas burner positioned adjacent to the baking stone and the tray assembly; wherein the gas burner is configured to combust a gas to heat the cooking cavity; wherein the gas burner is positioned to ignite fuel on the grate of the tray assembly to further heat the cooking cavity; and wherein the gas burner is positioned to heat at least a portion of the baking stone.
