A gas collapsible stove includes an expandable combustion chamber formed from nested annular rings that can collapse to about the height of a single ring and expand into a combustion chamber for burning combustible materials. Ventilation holes at the bottom of the combustion chamber provide airflow into the combustion chamber. The combustion chamber is frustoconical and narrows at the top which increases air flow into the combustion chamber via the Venturi effect. Combustible fuels can be added and ignited in the combustion chamber and cookware containing food can be placed onto an associated top plate suspending the combustion chamber. A gas head with a plurality of gas apertures can be inserted through a bottom plate secured to the bottommost annular ring to allow a combustible gas to be used as a combustible fuel in the combustion chamber.

The fuel metering orifice is spaced from the fuel line coupling on the mixing body. The fuel metering orifice is configured for directing the flow of fuel into the mixing chamber of the mixing body. The fuel metering orifice is separable from the mixing body when the fuel line is coupled to the mixing body at the fuel line coupling.

A heat exchange system for commercial kitchen installations, having a dedicated plenum to receive combustion emissions separate from cooking emissions, where the plenum has a heat exchange structure that efficiently and directly draws heat from the combustion emissions. The plenum heat exchange structure reduces the air volume that a ventilation hood covering the kitchen appliances needs to process and filter, while concurrently obtaining heat from combustion emissions without interference from cooking emission effluents such as grease, smoke, or particulate matter. Heat drawn out of the combustion emissions can be stored in a thermal reservoir for powering other parts of the commercial kitchen or other uses. The diverted airstream from combustion emissions, once passed through the heat exchange structure, can further ventilate through an additional heat exchanger, to provide tempered air to an interior location, such as the commercial kitchen via an air supply duct in the cooking emission ventilation hood.
