PROTEIN PRODUCT AND METHODS FROM ACID TREATED MEAT EMULSION
Meat that has been treated by a combination of comminution, treatment with alkali and drying exhibits excellent properties for use as a new food ingredient. Dried Functionalized Protein Product is prepared by comminuting meat to a particle size of less than 5 mm; mixing the comminuted meat with water, a food grade acid composition, a food grade alkaline composition, and a food grade salt to form a Functionalized Protein Brine having a pH in the range of from about 4.0 to about 9.5. The mixing is carried out so that the meat is exposed to the acid to cause the pH of the meat to be less than about 5.3 at some time during the process. The resulting Functionalized Protein Brine is dried to form a Dried Functionalized Protein Product. Water can be added to the Dried Functionalized Protein Product to form a Reconstituted Functionalized Protein Formulation.
Palatable Foods for a Methionine-Restricted Diet
A method is disclosed for making palatable methionine-restricted foods, to deliver a methionine-restricted diet to human or veterinary patients. A protein or a food product containing protein is partially oxidized, preferably with ozone, to oxidize nearly all of the methionine and cysteine. After oxidation, tryptophan and lysine are optionally added back since they tend to be oxidized also. Optionally, a small amount of methionine is also added back so that the final methionine is within a preferred range of about 0.85 to about 1.8 gram methionine per 100 gram total protein, preferably about 1.2 gram per 100 gram total protein.
Palatable Foods for a Methionine-Restricted Diet
A method is disclosed for making palatable methionine-restricted foods, to deliver a methionine-restricted diet to human or veterinary patients. A protein or a food product containing protein is partially oxidized, preferably with ozone, to oxidize nearly all of the methionine and cysteine. After oxidation, tryptophan and lysine are optionally added back since they tend to be oxidized also. Optionally, a small amount of methionine is also added back so that the final methionine is within a preferred range of about 0.85 to about 1.8 gram methionine per 100 gram total protein, preferably about 1.2 gram per 100 gram total protein.
ROTISSERIE TURKEY DEEP FRYER
A deep fryer and related methods of frying a whole turkey in a reduced cooking oil volume. A frying basin can have a rounded profile avoiding dead spaces within the frying basin. The frying basin can include a recessed channel at a bottommost portion of the frying basin to accommodate a heating element, such that the heating element does not project above a floor of the frying basin. The deep fryer can have a rotisserie assembly for mounting and rotating the whole turkey such that only a lower half of the whole turkey is submerged within the cooking oil at any one time. The deep fryer can include a kick-stand feature that allows a user to lower and raise the rotisserie assembly including the whole turkey using only one hand such that a user need not lean over or otherwise put their hands or body above the frying basin.

METHOD FOR MANUFACTURING PROCESSED MEAT FOOD, QUALITY MODIFIER FOR PROCESSED MEAT FOOD, AND PROCESSED MEAT FOOD
Adding (a) transglutaminase, and a gluconic acid salt or lipase to a processed meat food product, or (b) transglutaminase, a gluconic acid salt, and lipase to a processed meat food product with a sodium chloride content of 0.1 wt % to 1 wt % or a processed meat food product with a binding agent content of not more than 0.2 wt % affords a processed meat food product with a reduced sodium chloride content or a reduced binding agent content, with a good elastic texture.
APPARATUSES AND METHODS FOR PREPARING A COMESTIBLE MEAT PRODUCT
The substrates, systems, and methods described herein relate to textured substrates for preparing a comestible meat product. Substrates and methods are described herein for controlling one or more of growth, adhesion, retention, and/or release of cells (e.g., of a cell sheet) on or from the surface of the substrate. A method of preparing a comestible meat product may include applying a plurality of non-human cells to at least one patterned texture substrate, growing the cells on the patterned texture substrate to form the comestible meat product, and separating the comestible meat product from the patterned texture substrate. The patterned texture allows for improved growth, adhesion, retention, and/or release of cells as compared to another surface not comprising the patterned texture. In some embodiments, the cell culture substrate surfaces include a plurality of regions corresponding to a plurality of patterned textures.
