Provided herein are compositions and processes for producing compositions from an algae that overproduces protoporphyrin IX (PPIX). Also provided are methods of growing PPIX overproducing algae, methods of isolating PPIX-containing portions from algae cultures and compositions and methods of making food products with PPIX produced by algae. Provided herein are strains and methods to select strains that overproduce PPIX. Also provided are compositions, including edible compositions that include PPIX produced from algae. PROCESS FOR CONTROLLING A FERMENTATION PROCESS
A process controlling development of at least two predetermined metabolites in a fermented product comprising at least one plant material and/or at least one seaweed material, the process comprising the steps of: (i) Determining the at least 2 predetermined metabolites to be developed in the fermented product; (ii) Based on the predetermined metabolites determined in step (i) selecting at least one plant material and/or the at least one seaweed material; (iii) Based on the predetermined metabolites determined in step (i) selecting at least one fermenting organism; (iv) Mixing the at least one plant material and/or the at least one seaweed material selected in step (ii) with the at least one fermenting organism selected in step (iii) in a fermentation reactor providing a fermentation mixture; (v) Allowing the fermentation mixture to ferment under fermentation conditions favoring development of the at least two predetermined metabolites; whereby the fermented product is provided.

METHODS FOR CREATING EDIBLE SCAFFOLDING USING CHILEAN SEAWEED (COCHAYUYO)
Methods for creating edible scaffolding using algae, and more specifically, a protocol for the sterilization and decellularization of Durvillaea antarctica, Chilean seaweed, or cochayuyo to prepare the cochayuyo to be suitable for the culture of cells are described herein. The scaffold may be used for cell growth and is composed of sterile decellularized cochayuyo rehydrated with adhesion/carrier proteins. The decellularized algae supports cell growth, differentiation, and nutrient diffusion due to its porosity. The product is completely edible. The methods allow for the seaweed material to be dried and rehydrated without problems before and/or after decellularization. Also, the sample described herein can be easily sterilized without losing its form and can be hydrated with proteins. Additionally, the scaffolding can be used as a microcarrier because it can float inside the cell media, and one wouldn't need to change the cells for differentiation.
