A meat analogue may include a set protein emulsion, the protein emulsion having a protein and at least one insoluble particle. In some embodiments, at least a portion of the particle can include at least one mineral material selected from the group consisting of silicium, and calcium, such as one or more of rhombohedral calcite, scalenohedral calcite, silicon dioxide, and magnesium oxide; at least one organic material selected from the group consisting of a bone meal, a cartilage meal, a ground crustacean shell, a ground sea fish shell, and a ground egg shell; and/or a gelled vegetable gum, a gelled hydrocolloid, a polymerized vegetable gum, a polymerized hydrocolloid, or a mixture thereof. The meat analogue can be made by extruding the protein emulsion and cooling the extruded emulsion. The meat analogue can be cut into chunks and/or added to another comestible composition such as a gravy or broth.

An object of the present invention is to provide a particulate composition containing crystalline α,α-trehalose dihydrate, having an advantageous emulsifying ability. The above object is solved by providing a particulate composition comprising crystalline α,α-trehalose dihydrate, which consists of particles containing α,α-trehalose and maltose and/or maltotriose, wherein said particulate composition contains α,α-trehalose in an amount of 70% by weight or higher but 90% by weight or lower, on a dry solid basis; and maltose and/or maltotriose in a total amount of 3% by weight or higher, on a dry solid basis; and has a degree of crystallinity for crystalline α,α-trehalose dihydrate of 25% or higher but less than 90%, when calculated based on its powder X-ray diffraction profile.

ENTERIC COATING COMPOSITION AND METHOD OF MAKING AND USING THE SAME
A dosage form coating composition is disclosed. The composition includes an alginate, a pectin, a plasticizer, and optionally an emulsifying agent. The alginate is present in an amount by weight of at least 40.0% and at most 80.0% and the pectin is present in an amount by weight of at least 16.0% and at most 40.0%—and/or—the alginate and the pectin are present in a weight ratio of at least 1:1 and at most 5:1. The dosage form coating composition, when applied to a dosage form to a 3% to 5% weight gain, provides a coated dosage form having an enteric coating. The coated dosage form has at least two sequentially observed properties exhibiting enteric coating behavior.

Embodiments herein relate to food products with stable green color and methods of making the same. In an embodiment, a method of making a food product with stable green color herein includes transferring chlorophyll from an aqueous phase to a lipid phase within the food product, forming an emulsion including the lipid phase, and heating the food product including the emulsion. In an embodiment, a sealed food product is included having a container and a food product composition within the container. The food product composition including a stabilized emulsion. The stabilized emulsion can include a lipid phase and chlorophyll, wherein at least 50 wt. percent of the chlorophyll is disposed within the lipid phase of the stabilized emulsion and wherein the food product composition is hermetically sealed within the container.
