Savoury concentrate
The invention provides a savoury concentrate comprising: a) at least 30 wt. %, by weight of the concentrate, of an oil phase comprising liquid oil; b) 3-30 wt. %, by weight of the concentrate, of edible salt selected from sodium chloride, potassium chloride and combinations thereof; c) 1-50 wt. %, by weight of the concentrate, of savoury taste giving ingredients selected from glutamate, 5′-ribonucleotides, sucrose, glucose, fructose, lactic acid, citric acid and combinations thereof; d) up to 10 wt. %, by weight of the concentrate, of water; and e) particulate anhydrous non-defibrillated cell wall material from plant tissue selected from parenchymal plant tissue, stem tissue of monocotyledon plants and combinations thereof, said particulate anhydrous non-defibrillated cell wall material having a particle size of between 25 μm and 500 μm;
wherein the particulate anhydrous non-defibrillated cell wall material is dispersed in the oil phase in a concentration of 0.05 to 15 wt. %, by weight of the liquid oil. The particulate anhydrous non-defibrillated cell wall material from parenchymal pant tissue and/or stem tissue of monocotyledon plants is capable of forming an oil-retaining matrix within the liquid oil and thereby minimize oil exudation.
MALTODEXTRIN SYRUP HAVING A DE LESS THAN 20 WHILE HAVING PROPERTIES LIKE A CORN SYRUP OF DE 30-45
A new type of maltodextrin syrup is described having functional properties of a corn syrup having a DE of between 35-45 while having a DE value less than 20. In the most general embodiment, the syrup contains no more than 70% of total saccharides with a DP of less than 10 while at the same time having least 50% of the saccharides do have a DP of less than 10. The remainder of the saccharides have a DP of 10 or more. For those saccharides having a DP of less than 10 the distribution is weighted toward the higher end with saccharides having a DP of 5 to 9 being more than the saccharides having a DP of 1 to 4.
Curcumin nanoparticle and preparation and application thereof
Disclosed is a curcumin nanoparticle, including curcumin as core material and a wall material, where a weight ratio of the curcumin to the wall material is (5.5-7.5):100, and the wall material includes gum arabic and zein in a weight ratio of (1-5):5. The disclosure further provides a method of making the curcumin nanoparticle and a curcumin beverage containing the curcumin nanoparticle.
Quick Fix Yum Yum Mix
A new and novel composition of matter using dry, dehydrated spices and sweetener to formulate a dry spice mixture called Quick Fix Yum Yum Mix. Quick Fix Yum Yum Mix produces a sauce, commonly known as Yum Yum sauce when mayonnaise and water are added. The dry spice mix is comprised of spray dried butter powder derived from pasteurized cream & nonfat dry milk and mixed with powdered garlic, powdered paprika, granulated sugar, and powdered tomato. These spices and sweetener are thoroughly mixed together and the mixture is then ready for use and placed in light weight, shelf stable packaging. This provides a new method of producing Yum Yum sauce at need. When mayonnaise and water are added to the dry spice mix it produces Yum Yum sauce for dipping and salad dressing. This product is sensorily highly acceptable and is microbiologically safe.

A roasting and glazing apparatus includes a roaster, an agitator mounted within the roaster bowl for mixing a mixture of nuts and sugar during a roasting or glazing operation, a heater controlled to heat the roaster bowl during the roasting or glazing operation, and a cover removably mounted to the roaster bowl. The cover includes a reservoir for receiving water from a user and restricting water flow from the reservoir into the mixture of nuts and sugar in the roaster bowl. The cover and the roaster bowl together define a vent on a side of the cover opposite the reservoir. The vent is configured to direct steam out of the roaster bowl in a direction away from the reservoir.

The sweeteners include sucrose, fructose, glucose, high fructose corn syrup, corn syrup, xylose, arabinose, rhamnose, erythritol, xylitol, mannitol, sorbitol, inositol, acesulfame potassium, aspartame, neotame, sucralose, saccharine, or combinations thereof. The sweetness enhancer is selected from naringin dihydrochalcone, mogroside V, swingle extract, rubusoside, rubus extract, rebaudioside, and stevioside.
