A counter top cooking appliance has an enclosure defining a cooking chamber arranged to receive a cooking pan. The cooking chamber includes a lower heating element arranged so that the cooking pan may be supported thereon to receive conductive heating there-from, and an upper heating element disposed above and spaced from the cooking pan to provide radiant heating to food there-within. The enclosure includes an upper portion including the upper heating element, and a lower portion including the lower heating element, and a hinge connecting the upper portion to the lower portion. The hinge enables the upper portion to rest atop the lower portion to define the cooking chamber, and alternatively enables the upper portion to be swung relative to the lower portion so that the upper and lower portions are in a parallel side-by-side relationship and both heating elements are arranged so that the cooking pan may be supported on either thereof to receive conductive heating there-from.

Heating elements can be exposed in a cavity of the appliance and can have a shield that permits infrared energy to pass but blocks microwaves and/or provides physical support for internal components such as a quartz tube or resistance element. The shield can be grounded to one or more cavity walls by grounding elements that engage with the shield and a portion of the cavity wall. The heating element can emit a greater amount of infrared radiation in one direction than an opposite direction, e.g., due to a convex or other shape of the resistance element. Sets of heating elements can be controlled so that a second element begins to emit visible light at a same time that a first element stops emitting visible light. Convection air can be directed at one or more heating elements, which diffuse the air flow or otherwise prevent flow of air directly to food in the cavity.

A range has burner coil elements which have temperature switches as a portion of the replaceable coils. Upon reaching a predetermined temperature, the switch opens and power through the burner element is secured. The burner elements are preferably open coil units. Lowering the temperature in a cooking utensil below common ignition temperatures while still allowing boiling is an objective of many embodiments.

TRANSFER MECHANISM AND TRANSFER SYSTEM

Disclosed is a transfer system. The transfer system comprises a transfer mechanism that itself comprises a first portion and second portion that together define a recess for receiving a dough ball. The transfer system also includes a drive system. The drive system drives the transfer mechanism to position the dough ball on a cooking surface, to make a flat edible, moves at least one of the first portion and second portion to open the recess to release the dough ball, and also drives the transfer mechanism to push the flat edible off the cooking surface.
