The present invention relates to a process for the preparation of a food from a kit comprising a first sealed bag or container containing a dry product, and a second sealed bag or container, containing a sauce, said sauce providing a seasoning portion and a wet portion, in addition to the seasoning humidity, the ratio between the seasoning portion and the wet portion of said sauce varying between 10% by weight and 60% by weight of the seasoning portion and between 40% by weight and 90% in weight of the wet portion, said second bag and its contents, being subjected to sterilization or to pasteurization, in this case with the pH content less than 4.2, the process comprising the following steps:

a. opening the first bag containing the dry product, and placing the contents into a heatable container by a heat source;

b. opening the second bag containing the sauce and covering the dry product placed in the earlier stage a. in the heatable container;

c. activating the heat source, heating the container containing the dry product and the sauce for a period of time sufficient to allow that the whole is cooked.

The invention further relates to a kit for the preparation of a food by said process.

SAVOURY CONCENTRATE COMPRISING STRUCTURED AQUEOUS PHASE

The invention relates to an oil-continuous savoury concentrate comprising: 24-85 wt. % of fat by weight of the total concentrate, said fat having a solid fat content at 20 C. (N20) of at least 2 wt % (the solid fat is expressed as wt % by weight of the total amount of fat in the savoury concentrate); 8-50 wt. % of water by weight of the total concentrate; 0.1-20 wt % of water structuring agent by weight of the amount of water in the concentrate; 0.2-3 mol per 100 g of water of alkalimetal cation selected from Na+, K+ and combinations thereof; 0.2-3 mol chloride anion per 100 g of water; wherein fat and water are present in a weight/weight ratio fat to water of at least 2:3, preferably of at least 3:4. The savoury concentrate of the present invention can suitably be used as a base for the preparation of, for instance, soups and sauces. The savoury concentrate is ambient stable and despite the fact that it contains a substantial amount of salt, it exhibits a reduced tendency to form particles of crystalline salt.

Further aspects of the invention are a kit for the preparation of a beverage, a process for preparing a beverage and the use of a beverage according to the invention to reduce the quantity of tastant in a beverage without adversely affecting the taste of the beverage.
