The present invention concerns a fried product. More specifically, the invention relates to a fried product obtained from a composition comprising flour, yeast, microalgal flour and a drinkable liquid and having a low fat content relative to the standard composition of said fried product.

The invention also relates to the method for producing said fried products.

A swollen composition containing starch as a main component, and maintaining the swollen state after heating and having a characteristic texture inherent to a swollen food imparted thereto is provided. A starch content of the entire composition is 15 mass % or more in terms of dry mass. A moisture content of the composition is less than 150 mass % in terms of dry matter. A degree of gelatinization of the starch in the composition is 50 mass % or more. A dietary fiber content of the composition is 3.0 mass % or more in terms of dry mass. A ratio of the area under the curve within the logarithmic molecular weight range of 3.5 or more and less than 6.5 to the total area under the curve is more than 60%. Particle diameter d50 of the composition subjected to a starch and protein degradation treatment followed by ultrasonication is less than 450 μm.

The present invention relates to the production of edible wafers comprising (i) 100 parts by weight of a flour that comprises at least 5% by weight of the total flour of a non-wheat flour (such as millet; maize, barley, oats, rice, rye and/or soybeans) and/or at least 5% by weight of the total flour of a soluble fibre; (ii) an amount of water so the weight ratio of total amount of water to total amount of flour in the batter (denoted herein as R[w/f]) is no more than 1.5; and (iii) at least one enzyme comprising a cellulase in an amount of at least 0.0001 parts by weight; where the batter has a viscosity of from 200 to 1900 cps so it can be both pumped and baked on a heated surface without spillage. Preferably the flour has a low amount of (preferably is free of) gluten and/or gliadin proteins.
