Patty-Forming Apparatus with Top Feed and Rotary Pump
The food product machine with a food supply, a rotary food pump connected to the food supply, a molding mechanism having a mold plate and a knockout drive, and a mold plate reciprocating between a fill and a discharge position. The knockout drive reciprocates a knockout plunger to discharge molded food products from the mold plate, the mold plate being reciprocated between a cavity fill position and a cavity discharge position. The machine includes a manifold connected an outlet of the food pump and having an outlet passageway connected to an inlet of the molding mechanism for filling the cavity of the mold plate. The machine can further include a fill plunger system for increasing the fill pressure of the food mass prior to filling the mold cavities. Plungers extend into the manifold to displace food mass volume and increase the pressure in the manifold.

The present invention relates to a rotary cylindrical mould member and a method for manufacturing a rotary cylindrical mould member for moulding food products suitable for consumption. One or more recessed mould cavities (21) are formed in an curved outer surface (22c) of at least one porous mould body (22), defining the shape of the products which are to be produced. An airflow-resistive skin layer is formed by plastic deformation of a cavity surface layer, having a first flow resistance. An inner volume of the porous mould body (22) between an inner surface (22i) and the airflow-resistive skin layer has a porous structure with a second flow resistance to a compressed air flow through the porous inner volume, wherein according to the invention the first flow resistance is essentially the same as the second flow resistance.
INSTALLATIONS AND METHODS FOR MOULDING FOOD PRODUCTS WITH A PRESSURIZED AIR FOOD PRODUCT EJECTION SYSTEM FROM A MOULD DRUM
A moulding installation and method for moulding food products from a pumpable foodstuff mass are described. A revolving mould drum is provided with multiple mould cavities and a mass feed member is arranged at a fill position to transfer foodstuff mass into passing mould cavities. The foodstuff mass forms a food product in the mould cavity. A pressurized air food product ejection system includes air ducts in the mould drum that extend to the cavities and at least a portion of the surface delimiting a mould cavity is air permeable. The ejection system further includes a pressurized air source to feed pressurized air at a regulated ejection air pressure thereof to the air ducts. A controller is adapted to input at least one target parameter related to filling of the mould cavities with the foodstuff mass via the mouth of the mass feed member. The controller is adapted to automatically set an ejection air pressure by the pressurized air source on the basis of the inputted target parameter.

To slice meat loafs (100) with cross sections that vary across their longitudinal extension into accurately weighted slices (101), it is known to bring the loaf (100) into a defined shape with a uniform cross section across its length inside a forming tube (2) by means of pressing before it is sliced.
According to the invention, the pressing is performed in the longitudinal direction (L, 10) and the transversal direction (Q, 11) in a predefined order and in particular in multiple pressing steps (+Q, +L), which also comprise relieving strokes (Q, L) for the purpose of reducing the force exertion for pressing, on the one hand, and, on the other, for keeping the tissue structure of the loaf (100) intact.

The bottom and/or the sidewall is made from a porous material and pressurized gas is forced through the porous material to eject the edible material from the mold cavities. After ejection, the products are stacked such that one interleaver is between two edible materials.

The mold drum comprises one or more cavities with a mold cavity wall having at least partially a porous structure, whereas each cavity is connected to a passage. The present invention further relates to a cleaning apparatus for the inventive mold drum with supporting means for supporting the axis of the drum. Additionally, the present invention relates to a process for cleaning the inventive drum.
