PRODUCTION OF PRECOOKED FORMED MEAT PATTIES

A cold forming process for forming a meat patty includes heating a ground meat product to a temperature T.sub.1, wherein T.sub.140 F. The ground meat product is formed into an uncooked patty at temperature T.sub.1. The uncooked patty is precooked to form a precooked patty having a skin of depth D comprising denatured protein. The skin is formed on at least an area on the outside of the precooked patty. At least a first portion of the meat product disposed beneath said skin is at approximately T.sub.1. The precooked patty is cooked to form a cooked patty, wherein said at least a first portion of the meat product is at a temperature T.sub.2. The cooked patty is then frozen and then packaged.

A jump shuttle conveyor system is configured to receive formed food patties from a molding assembly of a patty forming machine. The system includes a lifting plate and belt assembly coupled to a frame which are configured to be indexed to different vertical positions relative to the frame. Formed food patties are received on a belt of the belt assembly thereon, and can be moved off of the belt onto a transfer shuttle conveyor system. An output conveyor system can be provided to receive the formed food patties.

A tooling for forming patties from a food mass includes a mould cavity holder; a mould cavity arranged such that it is received in the mould cavity holder, the mould cavity being made of a material porous to a fluid and including an internal face defining a patty forming mould and an external face separated from the internal face by a body of porous material; a clamp for clamping the mould cavity in the mould cavity holder; and a seal placed between the mould cavity and one of the mould cavity holder and the clamp. The seal is arranged such that it forces a pressure fluid, brought to the external face of the body of porous material to pass therethrough to the internal face.

System and method for forming a food patty

One variation of a system for forming a meat patty includes: a cylinder operable in a upright position and an inverted position; a piston running within the cylinder and defining a set of gas ports; a grinder configured to grind meat and to dispense a quantity of ground meat into the cylinder, in the upright position, during a grind cycle; an actuator system configured to transition the cylinder from the upright position to the inverted position during a dispense cycle to dispense the quantity of ground meat from the cylinder; and a gas supply configured to supply gas to the cylinder behind the piston at a first pressure during the grind cycle to limit ingress of ground meat into the gas ports and at a second pressure greater than the first pressure during the dispense cycle to dislodge the quantity of ground meat from the piston.

MOULDING FOOD PRODUCTS FROM A PUMPABLE FOODSTUFF MASS

An installation for moulding of three dimensional products from a mass of pumpable foodstuff material includes a pump having at least one pump chamber, a pump drive, and a moulding device including a mould drum, a mould member drive for moving the mould drum along a path, and a mass feed member. The mass feed member has a chamber with an inlet, a discharge mouth facing the mould member at the fill position along the path of the mould drum, an orificed grinder body and multiple mobile grinder members each arranged at one of the distinct positions of the mold cavities and cooperating with the grinding face of the orificed grinder body. The installation is advantageously employed for the manufacture of meat products from a pumpable meat mass for the manufacture of meat patties.

The present invention relates to a mould drum for moulding products from a mass of food starting material. The mould drum comprises one or more cavities with a mould cavity wall having at least partially a porous structure, whereas each cavity is connected to a passage. The present invention further relates to a cleaning apparatus and a forming apparatus preferably provided with a cleaning device for the inventive mould drum with supporting means for supporting the axis of the drum. Additionally, the present invention relates to a process for cleaning the inventive drum.
