A heat source device is provided for supplying indirect heat to a cooking grill such as a charcoal grill. The heat source device includes a heat chamber body to contain a heat source remotely spaced from the grill, an access door to access the heat source, and a mounting adapter to couple the heat source device to the grill. The heat source device may be configured to couple to an existing charcoal grill, as in a retrofit arrangement in which the mounting adapter couples to an ash catcher mount of the grill. The heat source device allows a user to feed or maintain a fuel source in the heat chamber to regulate the temperature in the grill without the need to open the grill, remove the food, or remove or open the cooking surface. If the heat source is maintained, the grill may operate indefinitely.

A method for converting a charcoal grill into a heat smoker is disclosed. The method comprises inserting a fin at least partially through the grilling surface of the grill such that the fin separates the charcoal grill into a first section and a second section, the fin positioned within the charcoal grill such that charcoal placed within the first section of the charcoal grill is prevented from entering the second section of the charcoal grill, the separation fin including at least one opening configured to allow smoke to pass therethrough, and igniting the charcoal such that air entering the grill through the air vent pulls heat and smoke emanating from the ignited charcoal around the fin and through at least one opening in the fin to smoke food on the grilling surface.

A smoke generating assembly for an indoor smoker includes a smoke barrel having a rotating auger positioned therein. The smoke barrel may be supplied with combustible material at a first end of the smoke barrel and the auger may be intermittently rotated to advance the combustible material toward a second end of the smoke barrel and over a smoldering heater to generate a flow of smoke. A discharge port at the end of the smoke barrel may be positioned over a water reservoir, and the auger may be selectively rotated to advance partially consumed combustible material out of the smoke barrel and into the water reservoir where it is quickly extinguished.

A smoker box including a box assembly having a first compartment for receiving a food product, a second compartment for receiving a smoking agent, and a divider separating the compartments from one another. To produce the desired flow of heat and smoke, a bottom wall of the second compartment, the divider, and a side wall of the first compartment all have one or more air flow passageways. These passageways permit air to enter the second chamber to smoke the smoking agent and circulates the smoke over the food product in the first compartment by forcing the generated smoke into the first compartment. In some forms, there may be a removable rack configured to be placed within the first compartment that is designed to support a food product such as sausages.

An indoor smoker includes a cabinet including an exhaust duct, a smoking chamber, a firebox, and a bypass duct extending between the firebox and the exhaust duct. The indoor smoker further includes a system of dampers and check valves to regulate the flow of smoke and air within the indoor smoker. A controller may regulate these features to terminate a smoking process by asphyxiating the combustible material and evacuating the smoking chamber, to pause a process by evacuating the smoking chamber while permitting bleed air into the smoldering chamber, or to continue a normal smoking operation.

The firebox assembly is coupled to the base assembly and includes a firebox and at least one vent. A removable shield separates the firebox assembly from the base assembly. The shield is slightly larger than the hole in the base in at least one dimension, such that as the shield rests on the base above the hole in the base, a gap is left that allows heat and air to flow from the firebox into the base assembly.
