DECONTAMINATION TANK AND METHOD FOR TREATING FOOD PRODUCTS

Disclosed are various embodiments for a decontamination tank and method for treating reducing microbial contamination of a food product. In one embodiment, decontamination tank comprises a first chamber for holding a first antimicrobial bearing liquid for reducing a microbial contamination on a surface of the food product. The decontamination tank further comprises a second chamber for holding a second antimicrobial bearing liquid of different content than the first antimicrobial bearing liquid in the first chamber, for further reducing the microbial contamination on the surface of the food product. The decontamination tank further comprises a first unloader configured to remove the food product from the first antimicrobial bearing liquid in the first chamber and to deposit the food product toward the second chamber. The decontamination tank further comprises a second unloader configured to remove the food product from the second antimicrobial bearing liquid in the second chamber.

This provides for less maintenance and downtime, particularly unscheduled downtime, than a system using more complicated exposed parts. The system for cleaning fresh and freshly-cut produce is designed to clean produce as soon as practicable after the produce is cut. As the produce falls downwardly, a spray manifold directs a produce-washing liquid upwardly so that the produce-washing liquid directly sprays and impacts the falling produce. The impact of the produce-washing liquid causes the produce to tumble and the descent of the produce is slowed, and consequently the produce is thoroughly coated and cleaned by the produce-washing liquid. In an alternative embodiment, a suspending fluid (preferably air) is simultaneously directed to the falling produce to slow the descent of the produce and further ensure that the produce is thoroughly washed and directly sprayed by the produce-washing liquid.

In one embodiment of the invention, harvested olives are stored in a storage tank in a storage solution containing water wherein the storage solution contains olive juices and salts. The storage solution with olive juices and salts is passed to a first ion exchange vessel having a strong acid ion exchange resin in hydrogen form at ambient temperature and pressure. Potassium and nitrogen ions and other cations are converted by the strong acid ion exchange resin and organic acids are released in order to create an acidic solution. The acidic solution is then returned to the storage tank for reuse as a storage solution.

Systems and methods for providing food intervention, pumping up, and tenderization are discussed. While such systems can include any suitable component, in some cases, they include a needleless spray nozzle head that injects injectade into food without requiring the head to contact the food. In some cases, the head comprises an elongated needleless spray bar that defines multiple internal fluid channels that extend from a first end to a second end of the spray bar. In some cases, the head comprises a manifold system with a first manifold portion at the first end and a second manifold portion at the second end of the spray bar. In some cases, the first manifold portion directs the injectade towards the second end, and the second manifold portion directs the injectade towards the first end of the elongated needleless spray bar.
