Method and Product for Hydrolysis of Lactose in Dairy Compositions
A dairy product comprising a sweetened dairy composition with a mass ratio of lactose to glucose equal to 1.0:2.7 to 2.6:1.5 and a mass ratio of lactose to galactose equal to 1.0:2.2 to 2.6:1.1. In a second aspect, a method comprises hydrolyzing lactose in the starting dairy composition in a lactase-catalyzed hydrolysis reaction and deactivating the reaction to provide a lactose percent conversion of 46 to 80 wt. %. In a third aspect, a dairy product comprises a fermented sweetened dairy composition comprising a lactose:glucose mass ratio of 0.01:2.4 to 1.0:1.0 and a lactose:galactose mass ratio of 0.01:2.7 to 1.0:1.0. In a fourth aspect, a method comprises hydrolyzing and fermenting lactose in a starting dairy composition, thereby providing a fermented sweetened dairy composition with a lactose percent conversion of 80 to 100 wt. %.

PROCESS FOR MAKING GALACTO-OLIGOSACCHARIDE PRODUCT
A process for preparing a galacto-oligosaccharide product comprises exposing a permeate composition to one or more enzymes that convert one or more compounds in the permeate composition to one or more galacto-oligosaccharide compounds to provide a galacto-oligosaccharide solution, wherein at least about 10% of total sugar, by weight, in the galacto-oligosaccharide solution is in the form of the one or more galacto-oligosaccharide compounds, and concentrating at least a portion of the galacto-oligosaccharide solution to provide a galacto-oligosaccharide syrup. In an example, a galacto-oligosaccharide product, for example made by the process, comprises a dry or substantially dry powder including one or more dried compounds from a permeate composition and at least 20% by weight of one or more galacto-oligosaccharides, wherein the powder is free or substantially free from a drying agent.

MILK-BASED FORMULATION
The invention relates to a milk-based formulation with a reduced carbohydrate content, having a ratio of carbohydrates to protein of at most 1.1, a protein content of at least 5.4% on dry matter basis, and a ratio of ash to protein is substantially similar to that of a milk raw material used as a starting material, and a method for the preparation thereof. The milk-based formulation can be used in the preparation of a recombined milk product with a reduced lactose content, having a full taste of normal milk without any deficiencies in its organoleptic properties.

Milk substrate having a lactose content of at least 20 wt % lactose is treated with an enzyme having transgalactosylating activity. The transgalactosylating activity of said enzyme may have been increased via glycation of lysine and/or arginine residues by incubation of said enzyme with high concentrations of glucose at elevated temperatures.
