The present invention provides a method for the production of a flavor-enhancing composition, the method comprising the steps of: i) providing a dairy liquid; ii) nanofiltrating the dairy liquid to obtain a nanofiltration permeate; iii) concentrating the nanofiltration permeate by reverse osmosis and/or evaporation to produce a flavor-enhancing composition, the flavor-enhancing composition comprising at least 50 wt % lactose by dry weight and having a K:Na ratio of at least 2:1, wherein nanofiltrating the dairy liquid uses a membrane having a molecular weight cut-off of from 300 Da to 800 Da.

The present invention provides a novel process for preparing fortified milk compositions from whole mammalian milk. The process of the present invention generally involves converting dried mammalian milk into a fats-enriched fraction, a protein-enriched fraction, and a carbohydrate-enriched fraction. The process comprises treating the dried milk with a fats extracting agent to provide a fats-enriched fraction, and a residual fraction comprising proteins and carbohydrates; separating said fats-enriched fraction from the residual fraction; and removing the fats extracting agent from the separated fats-enriched fraction to produce a dry fraction of oily, fats-enriched material and a fraction enriched in proteins and carbohydrates.

A liquid treatment system, in particular for concentrating milk, and method therefor. The system includes an inlet configured to receive fresh raw milk; and a pressure vessel connected to the inlet. The pressure vessel is provided with a pressure system configured to realize a pressure of at least 10 bar in the pressure vessel. A reverse osmosis membrane is included for filtering the raw milk. A pump is provided for pumping the raw milk under pressure out of the pressure vessel and through or along the reverse osmosis membrane. A permeate outlet is provided for the separated water and a milk outlet is provided for the concentrated milk.
