Low-mineral quark matrix
A low-mineral quark matrix is suggested, which is obtainable by (a) subjecting raw milk to heat treatment, separating the cream, (b) subjecting the skimmed milk such obtained to an ultrafiltration step and/or a reverse osmosis step, producing a retentate R1, which represents a dairy protein concentrate, and a permeate P1, (c) subjecting the permeate P1 to an electrodialysis step, producing a salt-depleted diluate D1, (d) combining the diluate D1 with the retentate R1, (e) subjecting the combination product such obtained to heat treatment until denaturation sets in, (f) fermenting the denaturation product such obtained by the addition of starter cultures and rennet, and (g) adjusting or standardising the fermentation product such obtained to defined dry matter and protein contents.
DAIRY PRODUCT AND PROCESS
A method of producing sialyloligosaccharides a sialyloligosaccharides-containing source that also contains carbohydrates and minerals. The process includes subjecting the source to a temperature of from about 67 C. and (i) filtration with a heat-resistant filter at a temperature of about 35 to about 95 C. to produce a first retentate and first permeate, or (ii) centrifugal separation to produce a light phase and a heavy phase and filtration of the light phase at a temperature of about 50 to about 70 C. to produce a first retentate and first permeate, (b) nanofiltration of the first permeate, or nanofiltration and diafiltration of the first permeate, to produce a second retentate and second permeate, and (c) concentration of the second retentate, to produce a sialyloligosaccharide-containing extract. Additionally, the invention relates to a sialyloligosaccharide-enriched composition comprising at least 3-sialyllactose and 6-sialyllactoseand its use in, for example, nutritional and infant formulas, and for maintaining or improving cognitive function.
Lactose-removing milk process for lactose-free milk production
The present invention relates to dairy and milk treatment industries for obtaining lactose-free milk and assessment of byproduct in particular, particularly to milk treatment industry through different separation means such as micro and nanofiltration equipment. One of the purposes of this invention is to provide a delactosed or lactose-free milk with sensory profile equivalent to a normal pasteurized milk using essential separation steps to reduce product costs. Another purpose of this invention is to determine the effect of milk natural components concentration on organoleptic properties to achieve the first purpose of this invention. Another purpose is to determine percentage between retentate and permeate to get a sensory profile equivalent to a normal pasteurized milk.

Method for processing animal skim milk
Claimed is the preparation of an infant formula base product, comprising: (a) microfiltration (ME) of animal skim milk over a membrane having a porosity of 0.10-0.35 micrometer and operating with a volume concentration factor of 1.5-8, resulting in a retentate (MFR) and a permeate (MFP); (b) ultrafiltration (UF) of the MEP originating from step (a) over a membrane having a molecular weight cut-off of at most 25 kDa and operating with a volume concentration factor of 1.5-8, resulting in a retentate (UFR) and a permeate fUEP); (c) combining the MFR from step (a) and the UFR from step (b), to obtain a defined casein/whey ratio. Alternatively, the product of step (a) is used as a protein source. Claimed is also a composition comprising 40-50 g casein, 30-40 g lactose and 5-16 g ash per 100 g dry weight.
MILK-BASED FORMULATION
The invention relates to a milk-based formulation with a reduced carbohydrate content, having a ratio of carbohydrates to protein of at most 1.1, a protein content of at least 5.4% on dry matter basis, and a ratio of ash to protein is substantially similar to that of a milk raw material used as a starting material, and a method for the preparation thereof. The milk-based formulation can be used in the preparation of a recombined milk product with a reduced lactose content, having a full taste of normal milk without any deficiencies in its organoleptic properties.
Demineralized whey powders
A demineralised whey powder is suggested which is obtainable by: (a) Separating raw milk, removing the cream; (b) Subjecting the skimmed milk such obtained to microfiltration or microdiafiltration, obtaining a whey protein-rich permeate P1 and a retentate R1 containing casein and GMP in the process; (c) Subjecting the permeate P1 to column chromatography separation, in which the lactoferrin contained therein remains on the column; (d) Subjecting the permeate, from which lactoferrin had been removed, to dialysis; and (e) Dehydrating the diluate such obtained.
Process for producing lactose-free milk with high in protein and calcium and milk without sweetness
The present invention is related with the milk industry in general and with the processing industry of milk to produce for lactose-free milk and assessment of the subproduct in particular, and even more particularly in the milk processing industry through different separating means of the components such as micro- and nano filtration. The function of the invention is to permit a lactose-free milk or a milk without lactose with a sensorial profile similar to that of normal pasteurized milk without lactose using the essential separation steps to reduce production costs, yet another objective was to determine the effect on the organoleptic characteristics of the concentration of natural milk components and concentrations which achieve the first objective, still another objective is to determine the ratio between retentate and permeate to obtain a sensorial profile equivalent to that of a normal pasteurized mil without lactose.

Non-Browning Lactose-Free Milk Powder and Methods of Making Same
Disclosed are processes for preparing dry or powder dairy compositions having low lactose contents and containing polyphenol compounds. The resultant dry or powder dairy compositions can be used to form reconstituted fluid dairy products, which can have improved organoleptic properties, such as less cooked flavor, sulfur odor, and brown color.
