PROCESSES AND METHODS FOR PRODUCING AN EDIBLE CREAM FROM OLIVES
An edible, olive oil based cream and processes for producing the same. Processes for producing an edible cream may include: milling olives to form a paste; malaxating the paste; centrifuging the paste into an oil phase, an aqueous phase, and pomace; centrifuging the aqueous phase; separating the aqueous phase into a precipitate and supernatant; filtering the supernatant; and homogenizing the supernatant, oil phase, and an emulsifier to produce an edible cream. An edible cream may comprise olive oil, olive vegetation water, an emulsifier and, optionally, one or more additional ingredients.
FOOD PRODUCT
Disclosed herein is a composition for forming an aerated ready-to-eat food product quiescently and in ambient environmental conditions. The composition comprises a matrix forming system which is capable of forming a matrix defining a structure of the food product at ambient environmental conditions upon exposure to a liquid. The composition also comprises an aerating system comprising an acidulant which is capable of acidulating at ambient environmental conditions at a rate that is similar to a rate at which the matrix is formed upon exposure to a liquid, and an alkali which is capable of reacting with the acidulant to form an aerating gas.
Natural dairy based creamers and method of making the same
Natural premium dairy based creamers for providing whitening and indulgent texture/mouthfeel of beverage and food products are provided. The creamers have good stability for 4 months at refrigeration, high whitening capacity and a pleasant mouthfeel when added to beverage or food, while being free from artificial additives. In a general embodiment, the present disclosure provides a creamer free of any artificial additives and comprising added sugar, milk fat, optionally vegetable oil, milk proteins including sweet buttermilk powder, gellan gum and optionally guar gum, and optionally natural flavors.
Liquid animal feed for domestic cats or dogs and methods for producing same
The disclosure relates to a liquid, milk-based animal feed for domestic cats or dogs, containing at least 70 vol % water, 2-13 vol % milk protein, 2-13 vol % milk fat, 1-5 vol % starch as an essential thickener, at least 0.01 vol % amino acid additive, and at least 0.01 vol % plant-based sugar. The disclosure also relates to a method for producing such an animal feed.
Whole grain composition comprising hydrolyzed starch
A composition comprising a whole grain with hydrolyzed starch. Although the starch can shift from relatively higher molecular weight moieties to relatively lower molecular weight moieties during hydrolysis, the relative proportions of the principal anatomical components of the caryopses of the grain—the starchy endosperm, germ and bran—remain approximately the same as evinced, for example, by the weight percentages and relative mass ratios of starch, fat, protein, dietary fiber, beta-glucan, and sugar in the composition. Additionally, the whole grain composition can be a powder, for example, a flour, and the whole grain composition can be granulated to a desired size to provide a powder that is highly dispersible in liquid. When gelatinized, hydrated and dispersed in a liquid, the whole grain with hydrolyzed starch can have a lower viscosity, grittiness, and graininess compared to the same variety of whole grain with unhydrolyzed starch.
DISINTEGRATED AND DECOMPACTED CELLULOSE-BASED VEGETABLE FIBRE MATERIALS USE AND METHOD FOR ACQUISITION AND PRODUCTION
The invention relates to separated, decompacted, cellulose-based fibres acquired from a vegetable raw material, wherein the separated, decompacted, cellulose-based fibres have an aspect ratio after soaking in water of longitudinal diameter to transverse diameter of 1:1 to 1000:1 and a water-binding capacity of >200 wt. % and a water retention capacity of >50%, and a method for acquiring and producing these separated, decompacted cellulose-based fibres. The purification method involves incubation of the vegetable material with an aqueous decomposition solution containing at least one dissolved amino acid and/or peptide with 2-50 amino acids to decompose the compacted cellulose-based fibres.

DRINKABLE DAIRY PRODUCT WITH MULTIPLE GAS EFFECT AND METHOD OF MAKING SAME
Methods and apparatuses for creating and dispensing a dairy-based sparkling beverage are disclosed. Embodiments include creating a beverage mix comprised at least in part of milk and cream, sugar, and a flavor base. The beverage mix is carbonated, and placed into a pressurized container. In some embodiments, the beverage mix is nitrogenated and delivered from a tap. In other embodiments, the beverage mix is placed into individual consumer packages, which are pressurized with carbon dioxide. In still other embodiments, the individual consumer packages may further be pressurized with nitrogen.
SEAWEED-BASED POWDER
The present invention relates to a seaweed-based powder having a storage modulus (G) of at least 30 Pa as determined on a 0.3 wt % aqueous dispersion of said powder and wherein said powder has a critical gelling concentration (C.sub.0) of at most 0.1 wt %. Further described herein is composition comprising the seaweed-based powder and a method of producing the seaweed-based powder.

In particular, the invention is concerned with combination of a protein system induced by controlled aggregation of milk proteins and only one hydrocolloid, high acyl gellan gum, which imparts outstanding sensory attributes on beverage product, in particular when containing reduced fat/sugar. A method of producing such beverage and the products obtainable from the method are also part of the present invention.
