A food processing system is provided with: a heating unit equipped with a heating mechanism for indirectly heating food; a cooling unit equipped with an air blowing cooler for cooling the food heated by the heating unit; and a conveyor for transferring the food through the heating unit and the cooling unit. The integrated food processing system allows a large amount of sterilized food having a good texture, good taste and long shelf life to be provided.

The system is measuring at least two aspects that determine the temperature change within an object during the cook process and they are geometry and thermodynamic properties.

A method of and a system for surface pasteurizing or sterilizing low-moisture particulate foods, such as nuts, oats, and spices, is disclosed wherein the foods are pre-heated, pasteurized or sterilized in a gas, optionally dried, and cooled. The gas pasteurizing or sterilizing the foods contains water vapor and one or more further gasses, preferably air.

Spiral cooking devices and methods of using the same

In one aspect, a spiral cooking device includes a first cooking zone with air configured to move horizontally therethrough in a first direction, a second cooking zone with air configured to move horizontally therethrough in a second direction different than the first direction, and a spiral conveyor belt at least partially positioned in the first and second cooking zones and configured to transport food product thereon through the first and second cooking zones. In one aspect, a spiral cooking device includes a spiral conveyor belt providing a central opening inside the belt and a conveyor belt drive member positioned externally of the central opening. In one aspect, a conveyor belt cleaning device is provided. In one aspect, a cooking device includes a frame including a plurality of coupled pipes for providing structural support to the device and at least one of the pipes is configured to have liquid pass therethrough.

The continuous pasteurization system (100) that pasteurizes raw food products (104) while substantially maintaining the raw state of the raw food products includes a conveyor (102) on which the raw food products (104) are loaded for delivery to a pasteurization apparatus 36, wherein the raw food products are quickly heated so that the temperature of the outer surface of the raw food products is raised sufficiently to achieve a desired pathogen kill level. Thereafter, the raw food products (104) are immediately cooled in a cooling apparatus (110) to remove the heat applied to the raw food product and maintain the substantial raw state of the raw food product. A control system (24) is connected to a processor (30) as well as various measuring devices and instruments, including temperature measurement devices (T.sub.1-T.sub.5) to control the operation of the pasteurization system (100).

Rotary Drum Blancher with Skinsheet Clamp

A method and apparatus for changing all or part of the skinsheet of a rotary drum blancher/cooler from being clean in place totally removable is disclosed. The drum includes the skinsheet (in sections) with a plurality of clamps and catches. Each catch is comprised of two catches—a clean in place catch and a totally removable catch. Each clamp is attached to a section and has an clamping position and a release position, and includes a bail. When a clamp is in the clamping position and its bail is in either the clean in place catch or the totally removable catch of a corresponding catch on an adjacent second section, the catch and clamp hold the adjacent sections together to form a part of the drum. When the clamp is in the release position and the bail is in the clean in place catch of the adjacent section, the clamp and clean in place catch allow adjacent sections to separate, but do not allow them to be removed.

A Steam Disinfection Inline System and Apparatus Agricultural Particulate Products

The present invention provides systems and methods for treating agricultural particulates, such as seeds, beans, granular and powder agricultural products, and the like, with a treatment agent, such as steam, as the agricultural products move forward along a pathway created by an auger, in a chamber, enclosed by an aligned celling and floor, and oppositely disposed lateral walls.

Thermal processing apparatus

A conveyor belt (36) is arranged in at least one spiral conveyor unit (32) or (34) is arranged in tiers forming at ascending spiral stack (38) and/or a descending spiral stack (40). A ceiling or top sheet (58) is positioned over the spiral stack. A circulation fan (60, 62) draws spent thermal processing medium laterally from the tiers of the spiral stack, up the exterior of the stack and across the top of the stack above the ceiling or top sheet and through a heat exchanger (64) located above the ceiling. The treated thermal processing medium is then routed across the remainder of the diameter of the spiral stack and then down the side of the spiral stack diametrically opposite to the circulating fan thereby to enter the spiral stack in a lateral direction diametrically toward the circulating fan. At least one opening (70, 100, 200) is formed in the ceiling between the heat exchanger and the diametrically distal end of the spiral stack from the circulating fan thereby to provide an alternative flow path for a portion of the thermal processing medium to enter the spiral stack from above, thereby resulting in more uniform treatment of the work product being carried by the conveyor of the spiral stack.
