EMULSIFIED CHEESE PRODUCT
Provided are methods for producing a low-sodium emulsified cheese product using a citric acid source.
DRIED PRODUCTS MADE FROM FRUIT AND/OR VEGETABLES AND PRODUCTION METHODS
The dried products of the present invention provide snacks (so-called crispy smoothies) having a particularly high proportion of fruit, which, owing to their production at low temperatures with extensive exclusion of oxygen, are distinguished by a high level of preservation of oxidation- and temperature-sensitive, but valuable, fruit constituents and which have an intense flavor and also a homogeneous appearance which is attractive in terms of color.

Homogenized formulations containing microcapsules and methods of making and using thereof
Disclosed are homogenized formulations that comprise microcapsules, wherein the microcapsules comprise an agglomeration of primary microcapsules and a loading substance, where each individual primary microcapsule has a primary shell, and the loading substance is encapsulated by the primary shell, and wherein the agglomeration is encapsulated by an outer shell. Also, disclosed are methods of making and using homogenized formulations by providing a pre-homogenized composition comprising one or more microcapsules and then homogenizing the composition. Some specific homogenization processes described are ultrasonic and pressure-based homogenizations.

SYSTEM AND PROCESS FOR RECOVERING ALGAL OIL
Herein disclosed is a method of processing a medium containing algae microorganisms to produce algal oil and by-products, comprising providing the medium containing algae microorganisms; passing the medium through a rotor-stator high shear device; disintegrating cell walls of and intracellular organelles in the algae microorganisms to release algal oil and by-products; and removing the algae medium from an outlet of the high shear device. In an embodiment, disintegration is enhanced by a penetrating gas capable of permeating the cell wall. In an embodiment, enhancement is accomplished by super-saturation of the penetrating gas in the medium or increased gas pressure in a vessel. In an embodiment, the penetrating gas is different from the gas produced by the cell during respiration. A suitable system is also discussed in this disclosure.
