FLAVOR-MODIFYING COMPOSITIONS CONTAINING LACTASE
The present disclosure relates generally to flavor-modifying compositions and their use in various comestible products, such as food products, beverage products, nutritional products, including dairy products. In some embodiments, the flavor-modifying compositions include lactase. In some embodiments, the flavor-modifying compositions include one or more sweetness enhancers. In some embodiments, the flavor-modifying compositions also include one or more flavorings, such as sweeteners, including, but not limited to, sugars, high-intensity sweeteners, or combinations thereof. In some aspects, the disclosure provides the use of such flavor-modifying compositions in various comestible compositions. Such comestible compositions include various additional components, such as animal proteins (for example, dairy proteins), non-animal proteins, and the like. Such comestible compositions can be packaged as or included in food products, beverage products, or animal feed products. In some embodiments, such products are dairy products, such as dairy-based beverages, yogurt, cheese, condensed milk, evaporated milk, powdered milk, infant formula, buttermilk, kefir, cream, creamer, custard, ice cream, gelato, frozen custard, frozen custard, cottage cheese, and the like.
SOLUBILIZATION OF A SWEET MODULATOR AND FLAVOR
Provided herein is a method of making a concentrated solution of (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one, or a salt or solvate thereof, comprising adding to an aqueous solution: a) a food grade polymer that is soluble in water at or above 0.1% by weight at 20 C. to the aqueous solution; b) a sweetener; and c) (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one wherein the concentration of (S)-1-(3-(((4-amino-2,2-dioxido-1H-benzo[c][1,2,6]thiadiazin-5-yl)oxy)methyl)piperidin-1-yl)-3-methylbutan-1-one, or a salt or solvate thereof, is greater than or equal to 1 ppm, by weight of the total weight of the solution, at 3 C. when the pH is less than or equal to 4 or it is greater than or equal to 7 ppm, by weight of the total weight of the solution, at 25 C. when the pH is less than or equal to 4. Further provided herein are solutions and beverages prepared by the methods.
Sweet flavor modifier
The present invention includes compounds having structural formula (Ia): ##STR00001## or salts or solvates thereof. These compounds are useful as sweet flavor modifiers. The present invention also includes compositions comprising the present compounds and methods of enhancing the sweet taste of compositions.
SWEETENER AND FLAVOR ENHANCER FORMULATIONS
Formulations comprising one or more sweetener and one or more flavor modifying compound are provided herein, wherein the formulation is provided for use in ingestible products, such as food or beverage products or pharmaceutical, or for use in non-comestible products, such as cosmetic or hygienic products.

The present invention relates to the use of compounds which are capable of producing a cooling sensation when they are brought into contact with the human body. In particular, the present invention relates to the use of compounds modulating TRPM8, and optionally to the use of compounds selectively exhibiting agonist activity at the TRPM8 channel. Such compounds have applications in many fields, particularly in oral and personal hygiene products and foodstuffs, but also in pharmaceutical composition products, cosmetics, textile products and packaging products. The present invention further relates to products containing such compounds and to the medical use of such compounds.
SWEET FLAVOR MODIFIER
The present invention includes compounds having structural formula (Ia):

The present invention provides an oil-and-fat feel enhancer for foods and beverages containing fats and oils, which contains at least one selected from the group consisting of 2,4,5-trimethylthiazole, 2,3,5-trimethylpyrazine, and 4-ethylguaiacol as an active ingredient, and is widely utilizable and easily produced.
TASTE MODIFYING COMPOSITIONS AND USES THEREOF
The present disclosure generally relates to various formulations and uses of N-(7-acetyl-2,3-dihydrobenzo[b][1,4]dioxin-6-yl)-2-(4-acetylpiperazin-1-yl) acetamide (TM1), or any comestibly acceptable salts thereof. In some aspects, the disclosure provides compositions that include TM1, or a comestibly acceptable salt thereof. In some embodiments, the compositions are ingestible compositions, including, but not limited to, packaged food and beverage products. In some other aspects, the disclosure provides uses of TM1, or a comestibly acceptable salt thereof, and related methods for reducing a bitter taste of an ingestible composition, such as an ingestible composition for use in a food, beverage, oral care, nutraceutical, or pharmaceutical product.
