Emulsion composition
An emulsion composition includes water, an oily component, gum ghatti and a modified starch. The content of the gum ghatti is 32% by mass or less and the content of the modified starch is 500 parts by mass or less relative to 100 parts by mass of the gum ghatti. The emulsion composition has excellent emulsion stability.

A sugar-free soluble tea extract tablet and a method for preparing it that includes the steps of providing a sweetener blend, a natural binder, and a tea extract, in a proportion of five grams of sweater blend and one gram of natural binder for every one gram of tea extract. Then, heating the sweetener blend to melt into a liquid at a temperature ranged between 100 to 300 degrees Celsius, adding the tea extract and the natural binder to the melted sweetener blend to form a mixture, stirring the mixture thoroughly and pouring it into molds for cooling. The sweetener blend includes Erythritol and Monkfruit or stevia sweetener, and the natural binder is an organic gum fiber blend such as organic guar gum, organic gum arabic, organic agave fiber, organic rice hulls, or organic agave syrup.

WATER-SOLUBLE CURCUMIN LIQUID AND PREPARATION METHOD AND APPLICATION THEREOF
A method for preparing a water-soluble curcumin liquid includes the following steps: A) dissolving curcumin, vitamin C and ascorbyl palmitate in an ethanol aqueous solution, evaporating ethanol under reduced pressure, and vacuum drying to obtain a curcumin-vitamin C-ascorbyl palmitate co-crystal; and B) high-speed emulsifying the curcumin-vitamin C-ascorbyl palmitate co-crystal and a water-soluble colloidal solution that includes an emulsifying additive under vacuum, sequentially conducting a two-stage wet grinding, a homogenization and a potential adjustment to obtain the water-soluble curcumin liquid.

Disclosed herein is a method for producing modified gum arabic, the method comprising: providing gum arabic; heating said gum arabic, resulting in heat-treated gum arabic; dissolving said heat-treated gum arabic in a solution; optionally, filtering said solution containing said dissolved gum arabic; and subjecting said solution containing said dissolved gum arabic to spray-drying. Further disclosed herein is a gum arabic from Acacia Senegal having (i) a weight average molecular weight (M.sub.w) of ≥3.8.Math.10.sup.6 Da, and/or (ii) a RMS-radius of gyration (R.sub.g) of ≥140 nm.
