Lysolecithin compositions and their use
A method of preparing a lysolecithin composition. The method includes the steps of (a) providing a lecithin mixture including a lecithin, water, and ethanol, (b) adding phospholipase A1 or A2 to the lecithin mixture; and (c) allowing an enzymatic reaction to occur so that at least 70% of the phospholipids in the lecithin are converted to lysophospholipids to obtain the lysolecithin composition. Also disclosed are a lysolecithin composition thus prepared, a flavor emulsion prepared from the lysolecithin composition, and a liquid beverage or liquid beverage concentrate containing the lysolecithin composition.
Storage and delivery system
Provided is a storage and delivery system that includes a container containing a stable liquid composition therein for increasing the viscosity of an aqueous liquid or aqueous liquid solid mixture foodstuff and having a viscosity of less than 2000 cP and a water activity of greater than 95%, wherein the composition comprises one or more thickening agents and one or more polysaccharides, and a pump dispenser sealingly attached to the container and having a valve for inhibiting or preventing drying of the composition in the container. Further provided is a method of delivering a stable liquid composition to an aqueous liquid or aqueous liquid solid mixture foodstuff by use of the storage and delivery system. A method for increasing the viscosity of an aqueous liquid or aqueous liquid solid mixture foodstuff by adding the stable liquid composition thereto is also provided.
Method for the preparation of a sausage mixture coating gel including high-pressure processing
A method for preparing an aqueous coating composition to be applied by co-extrusion around a food preparation and contacted with a gelling agent, such as calcium chloride, to form a shell around the food preparation. After mixing at least the water and the alginate of the composition, the mixture is exposed to a high pressure of at least 1400 bar, for example at least 1800 bar, for at least 0.1 second.
ENCAPSULATION
An encapsulated flavor, comprising a core material, flavor material and a coating material, the core material comprising a finely-divided native starch, xanthan gum and konjac, the combined weight proportion of the xanthan gum and konjac present in the encapsulated flavour being from about 4% to about 16%, and the relative weight proportions of xanthan gum to konjac being from about 20:80 to about 80:20. The encapsulated flavors may be completely gelatin-free, while retaining the desirable qualities of gelatin.
Particle composition for easy-to-use solid preparation and easy-to-use solid preparation including said particle composition
An object of the present invention is to provide a particulate composition for an easy-to-take solid preparation, which has excellent moldability (hardness) and slipperiness. The present invention relates to a particulate composition for an easy-to-take solid preparation, comprising sugar alcohol and a gelling agent that will show slipperiness when it is brought into contact with water, wherein a part or whole of the surface of the particulate composition is coated with the gelling agent, to an easy-to-take solid preparation comprising the particulate composition, and to a method for the production of the easy-to-take solid preparation.
A PETFOOD COMPOSITION AND PROCESS FOR PREPARATION THEREOF
The present invention relates to a process for making a pet food composition comprising a red seaweed as a natural gelling agent with enhanced palatability. The compositions of the invention can be devoid of commonly used, chemically treated gelling agents such as carrageenan, alginate, agar, gellan gum.
TEXTURE MODIFIED FOOD PRODUCT
The invention is directed broadly to a method of preparing a texture modified food product, comprising the steps: (a) providing a partially cooked fruit or vegetable; (b) comminuting the partially cooked fruit or vegetable to form a paste; and (c) moulding the paste to form the texture modified food product which is shaped and/or textured into a generic shape of the fruit or vegetable selected to form the paste.
Compositions for therapy and health containing amino acids with bitter taste
This disclosure provides a dry powder formulation of free amino acids with an acceptable and even good taste profile.
Loosening Agent for Starch-Containing Food
Provided is a loosening agent for a starch-containing food having a favorable loosening property. Also provided are a method for improving a loosening property of a starch-containing food, and a method for producing a starch-containing food having a favorable loosening property. Specifically, a loosening agent for a starch-containing food, that is for use as an emulsion product or is for use as an emulsion product by adding water to the loosening agent for a starch-containing food, comprising: an oil and/or fat composition containing an oil and/or fat and an emulsifier; and a thickening polysaccharide, wherein the emulsion product has a viscosity of 50 to 10000 mPa.Math.s (25° C.) is provided.
Liquid food composition comprising Sophora japonica extract
The present invention relates to a liquid food composition comprising a Sophora japonica and a broad-leaf bamboo extract, and more particularly, to a liquid food composition including a Sophora japonica extract, a broad-leaf bamboo extract, and xanthan gum. The liquid food composition includes a high content of the Sophora japonica extract while simultaneously ensuring the liquid properties, and thus can be used widely in the field of foods because the liquid food composition is applicable to liquid formulations.
