Reduced sucrose sugar coatings for cereals and methods of preparation
Disclosed are improved sugar coatings for topically pre-sweetened food products that are sugar reduced whether in the form of a syrup or in the form of a dried coating. The syrup form is useful as an intermediate product in the preparation of pre-sweetened food products. In dry form, the present formulations can be a component part of a composite food product especially in the form of a topical coating or filling. The present invention is particularly suited for the preparation of R-T-E pre-sweetened cereals. The coating formulations comprise less than 70% sucrose, corn syrup and 1-20% non-hydrated integrated starch and preferably about 5-10% insoluble mineral salts each of particle size of about 50 microns.
FILLING COMPOSITION FOR A CONFECTIONARY PRODUCT
A reduced calorie filling composition may include a chocolate component and an aqueous component. The chocolate component may be present in an amount from about 30% to about 70% by weight of the reduced calorie filling composition. The aqueous component may include water in an amount from about 9% to about 20% by weight of the reduced calorie filling composition. In addition, the aqueous component may include a sweetener component in an amount from about 5% to about 30% by weight of the reduced calorie filling composition. The aqueous component may also includes a humectant in an amount from about 2% to about 10% by weight of the reduced calorie filling composition. A confectionery product may be a finished reduced calorie confectionery product having a reduced calorie coating composition on the reduced calorie filling composition. The finished reduced calorie confectionery product may be a reduced calorie truffle.

Zero-Sugar Beverage Composition
A zero-sugar beverage composition is provided that includes an electrolyte, acid, and nonnutritive sweeteners. The electrolyte blend used in the beverage has a high buffering capacity, which enables an increased amount of citric acid to be added while maintaining a pH of about 3.4. The combination of sweeteners sucralose and acesulfame potassium, electrolyte blend having high buffering capacity, citric acid, and a variety of flavoring systems provides a beverage that is well accepted by consumers.

KETONE BODY ESTERS OF S-BETA-HYDROXYBUTYRATE AND/OR S-1,3-BUTANEDIOL FOR MODIFYING METABOLIC FUNCTION
Compositions and methods for producing elevated blood levels of ketone bodies and modifying metabolic function in a mammal. Compositions include at least one ester of S-beta-hydroxybutyrate and/or a mono- or di-ester of S-1,3-butanediol and at least one ketone body component. The ketone body component includes beta-hydroxybutyrate, acetoacetate, or both. The beta-hydroxybutyrate is R-beta-hydroxybutyrate, S-beta-hydroxybutyrate, or both. When the ketone body component is S-beta-hydroxybutyrate, the 1,3-butanediol is R-1,3-butanediol, S-1,3-butanediol, or both. Compositions may comprise a keto stack of multiple forms of ketone bodies.
FOOD COMPOSITION
The present invention relates to food compositions, in particular soft food compositions comprising amorphous porous particles, the amorphous porous particles comprising sweetener, bulking agent and surfactant. Further aspects of the invention relate to a spread having an enhanced sweetness perception and a process for manufacturing a food composition having a soft texture.
