Compositions of coenzyme Q10 and methods of use
In an embodiment, a nutritional supplement including, about 0.5 mg to about 4 mg of folate, about 6.25 mg to about 50 mg of vitamin B-6, about 250 mcg to about 2000 mcg of vitamin B-12, about 75 mg to about 600 mg of coenzyme Q10 (CoQ10), about 1250 IU to about 10,000 IU of vitamin D.sub.3, about 25 mg to about 200 mg of magnesium, about 25 mg to 200 mg of N-acetyl-L-cysteine, about 5 mg to about 40 mg pyrroloquinoline quinone disodium (PQQ), about 25 mg to about 200 mg of curcumin extract, about 25 mg to about 200 mg of resveratrol, about 25 mg to about 200 mg berberine, about 12.5 mcg to about 100 mcg of chromium, and about 12.5 mcg to about 100 mcg of selenium. In an additional embodiment, the aforementioned nutritional supplement in a nutritional kit that further includes an omega-3 supplement.

A trace element solution comprises at least the following metals: zinc; manganese; selenium; and copper; and which comprises a concentration of the metals of at least 90 mg/ml. The solution may comprise the following concentrations: at least 60 mg/ml zinc; at least 10 mg/ml manganese; at least 5 mg/ml selenium; and at least 15 mg/ml copper. The solution may comprise chromium, iodine and chromium.

MICROBIAL FERMENTATION COMPOSITION AND USE THEREOF
A microbial fermentation composition is prepared through after extracting and enzymolyzing selected Edible and medicinal fungi Agaricus blazei, Lentinus edodes, Flammulina velutipes and ginseng of reinforcing vital energy, adding trace elements selenium, zinc and molybdenum, and fermenting and transforming by probiotics. It is demonstrated through experiments of in vitro inhibition of HepGII cells (a liver cancer cell) and Hela cells (a cervical cancer cell) that the fermentation composition formed by probiotic fermentation has significant inhibitory effect on the proliferation of tumor cells. Compared with the non-fermented composition, the fermentation composition has a significantly enhanced inhibitory effect on experimental tumor cells and the difference is significant. The inhibitory effect of the fermentation composition on experimental tumor cells increases with the increase of the concentration.

PEPTIDE COMPOSITIONS FOR SLOWING DEGRADATION OF VITAMIN MINERAL SUPPLEMENTS, FOODS, PHARMACEUTICAL AND COSMETICS
Compositions of foods, vitamin and mineral supplements, topical or oral drugs, and cosmetic products containing a small peptide or peptides for slowing degradation, for example by transition metals. The peptides are di, tri, terra-, and/or penta-peptides containing two or more aspartic acid residues. The degradation of several of the vitamin and other constituents vitamin-mineral supplements can be considerably slowed by composition incorporating such peptides, particularly if soluble (and thus bioavailable) forms of copper and/or iron are also present. The peptides can be hydrolyzed by the normal digestive process thus releasing bound metals. Multiple aspartate peptide(s) compositions with foods, topical or oral drugs, cosmetic, and hair care products can replace synthetic chelating preservative agents. Methods are also described to effectively slow degradation and preserve the above products using multiple aspartate peptides.

METHODS AND PRODUCTS TO PROVIDE ORAL NUTRITIONAL CARE TO SUBJECTS WITH DEMENTIA
The present invention provides food products, nutritional programs, and methods for meeting nutritional needs of subjects with dementia and related cognitive disorders. In one embodiment, the invention provides a food product comprising a reversibly sealed container and a soup, wherein the soup is in the container and comprises a total volume of 200-2000 mls, a vegetable or meat component, 300 to 2500 calories, a macronutrient caloric distribution comprising: 20-80% fat, 10-45% protein, and 10-65% carbohydrate, about 2% to about 40% medium chain triglycerides, omega 3 fatty acids in an amount of 100 to 2000 mg and less than 20 solid food particles having a volume greater than about 20 cm.sup.3. Such food products, when administered to affected subjects, can positively impact (i) nutritional status; (ii) quality of life; (iii) disease course; (v) the demand for assistance from a care giver; (vi) subject compliance with a nutritional plan using the food product, and (vii) ease of monitoring compliance by the caregiver for verification.
