An herbal water beverage containing hemp preferably includes water, sugar, organic flavoring, vitamins, and hemp oil. Organic hemp seed oil is added to a water based solution of organic gum arabic and organic maltodextrin. The solution is homogenized and then spray dried. During the drying process the hemp seed oil is surrounded by a matrix of maltodextrin and gum arabic that protects it from exposure to air (oxidation). The water is removed in a dryer through evaporation leaving hemp oil droplets surrounded by a film of gum arabic and maltodextrin matrix. The gum arabic acts as an emulsifier, retarding the separation of the hemp seed oil once it is added to the water, sugar, organic flavoring, and vitamins to form the finished aqueous beverage.

The present disclosure relates to nutritional compositions containing a fiber blend that includes soluble fibers that are fructo-oligosaccharide (FOS), acacia gum and inulin and also includes insoluble fibers that are outer pea fibers. In an embodiment, the fiber blend includes about 50% soluble fibers and about 50% insoluble fibers, and the soluble fibers are FOS in an amount of about 41% by weight of the soluble fibers, acacia gum in an amount of about 41% by weight of the soluble fibers, and inulin in an amount of about 18% by weight of the soluble fibers. In such an embodiment, the insoluble fibers are outer pea fibers. The present disclosure also relates to methods that include administering a therapeutically effective amount of a fiber blend that includes FOS, acacia gum, inulin and outer pea fibers to a patient after antibiotic treatment.

Disclosed herein is a method for producing modified gum arabic, the method comprising: providing gum arabic; heating said gum arabic, resulting in heat-treated gum arabic; dissolving said heat-treated gum arabic in a solution; optionally, filtering said solution containing said dissolved gum arabic; and subjecting said solution containing said dissolved gum arabic to spray-drying. Further disclosed herein is a gum arabic from Acacia Senegal having (i) a weight average molecular weight (M.sub.w) of 3.8.Math.10.sup.6 Da, and/or (ii) a RMS-radius of gyration (R.sub.g) of 140 nm.
