METHOD FOR DETECTING LIVE LACTIC ACID BACTERIA WITH CARBOHYDRATE METABOLISM ACTIVITY

A method for detecting live lactic acid bacteria with carbohydrate metabolism activity contained in a lactic acid bacteria-containing beverage or food includes adding a reagent that exhibits fluorescence when degraded by an esterase and a reagent for determining cell membrane damage to a lactic acid bacteria-containing beverage or food; adjusting a hexose having an aldehyde group contained in the lactic acid bacteria-containing beverage or food to 0.01 mM or more; and detecting lactic acid bacteria that excrete a fluorescent substance and have no cell membrane damage from the lactic acid bacteria-containing beverage or food.

AESCULIN STURGEON SKIN GELATIN FILM WITH ANTIOXIDANT ACTIVITY AND ENTEROCOCCUS FAECALIS DETECTION ABILITY AND A METHOD OF PREPARING THE SAME

A method of preparing an aesculin sturgeon skin gelatin with antioxidant activity and Enterococcus faecalis detection ability includes: 1) mixing a sturgeon skin gelatin and distilled water in a ratio of 1:15-1:25 (w/v) at 50-70 C. and filtering to obtain a sturgeon skin gelatin solution; 2) adding aesculin and a glycerin solution to the sturgeon skin gelatin solution, stirring the resulted sturgeon skin gelatin solution at 30-50 C. for 30 minutes, and filtering; and 3) removing air bubbles from the sturgeon skin gelatin solution of step 2) under reduced pressure, placing the sturgeon skin gelatin solution on an acrylic glass, and drying the sturgeon skin gelatin solution at in a vented oven 25 C. and 45-55% relative humidity for 24 hours to obtain the aesculin sturgeon skin gelatin film.

The present invention relates to a prebiotic composition comprising a galacto oligosaccharide (GOS) produced from Lactobacillus plantarum, wherein the GOS acts as a selective growth medium for a chosen Lactobacillus plantarum probiotic bacterial strain, and wherein the GOS is substantially the same as the form produced by reverse -galactosidase reaction in the chosen probiotic bacterial strain. The present invention also relates to methods of producing GOS and related composition incorporating the GOS.

Method for the differential enumeration of lactic acid bacteria in a mixture in a food product

The invention relates to a method for distinguishing between and enumerating strains of lactic acid bacteria or Bifidobacteria present in a food product. This method implements various agar culture media and/or selective culture conditions, combined with various chromogenic substrates.

Production and Use of Bacterial Histamine

A method is provided of selecting specific probiotic lactic acid bacteria producing histamine and the use of such strains for beneficial effects for mammals. The method includes selecting a lactic acid bacterial strain for use in the local production of histamine in a mammal, and further comprises screening bacteria for the presence of an active histidine operon and selecting a strain which has an active histidine operon and is capable of producing histamine. Preferably said strain is selected for its ability to produce histamine at a level of greater than 250 pg/ml. The present invention further provides products comprising the strains obtainable by the selection methods of the invention for use in the local production of histamine in a mammal, in particular for use in the treatment or prophylaxis of inflammatory conditions.
