Methods for improvement of visual function and compositions used therein
Methods herein are described for improvement in visual function by administering macular carotenoid compositions containing an effective daily dose, to a subject in need thereof. More particularly, methods herein are described and include use of the compositions herein by identifying a subject in need thereof, administering a daily dose of lutein and/or zeaxanthin isomers, comprised of meso-zeaxanthin and R,R zeaxanthin, alone or in combination thereof, the composition also including at least one food grade excipient, and evaluating visual performance. The subject is exposed to light of variable wavelengths and intensity and is suffering from visual fatigue. The composition improves contrast sensitivity, glare performance, photo stress recovery, and/or macular pigment optical density, and thus alleviates visual fatigue. The composition is safe for human and other animals for consumption and can be used for improvement in visual health in the subject, when administered in an effective amount.
Preparation method and application of astaxanthin H1-, or H2- or J-aggregate water dispersion system
Preparation method and application of astaxanthin H1-, or H2- or J-aggregate water dispersion system are provided. The three kind of color-different astaxanthin multimer nano-dispersion systems utilize a special molecular structure of natural biomacromolecule chitosan and fish sperm DNA as well as physical interaction between macromolecules to induce formation and stability of astaxanthin multimers under solvent and salt ion-effects. Low-toxicity ethanol is selected as a good solvent for astaxanthin. The organic solvent can be completely removed in the later stage of the preparation process, and can be further enriched and recycled, which is beneficial to clean production and low cost. By adjusting process parameters, the H1-, or H2- or J-type astaxanthin aggregate water dispersion system can be obtained, so as to control a coloration range of astaxanthin water-based products to be yellow, orange and pink. Furthermore, during concentration, dehydration and reconstitution, astaxanthin aggregation patterns and coloring effects are maintained.
CLEAR LIQUID CAROTENOID FORMULATIONS AND CLEAR BEVERAGES CONTAINING THEM
The embodiments disclosed herein are directed to clear liquid formulations comprising:
a) at least one carotenoid, and
b) at least one modified food starch, and
c) at least one saccharide, and
d) water
The present invention is further directed to a process for the manufacture of such liquid formulations, as well as to beverages containing the same. These beverages are also clear and color stable.

PLANT-BASED VEGAN SIMULATED EGG
The present invention is directed to plant-based vegan simulated egg compositions and methods of producing such compositions. More particularly, the invention provides, for example, vegan simulated egg yolk and/or egg white compositions for producing a fried or poached egg, an omelette, or as a substitute for egg yolks in various foods. In some embodiments the egg yolk comprises beta glucan, to reduce blood cholesterol, and/or the egg white comprises about 10 wt % protein.
