Mixtures with stabilising properties
The present invention primarily relates to novel mixtures with stabilizing properties, particularly for avoiding, reducing or delaying the formation of sensorially undesired flavours and/or tastes in oxidative degradation processes or autoxidative processes or reducing, avoiding or delaying oxidative processes in one or more oxidation-sensitive compounds, particularly autoxidative processes, their use in specific preparations as well as novel preparations and methods of producing such preparations. Additionally, herein described are methods for decreasing, avoiding or delaying the formation of sensorially undesired flavours and/or tastes in oxidative degradation processes or autoxidative processes or for decreasing, avoiding or delaying oxidative processes in one or more oxidation-sensitive compounds, particularly autoxidative processes.
PEANUT FLAVOR COMPOSITIONS AND FOOD PRODUCTS CONTAINING THE SAME
The presently disclosed subject matter provides a flavor composition that can provide and/or enhances a peanut flavor. In certain embodiments, the flavor composition comprises aroma compounds that contribute to a peanut flavor. Also provided herein are methods of producing a food product and/or enhancing a roasted peanut flavor of a food product using the compounds and/or flavor compositions disclosed herein.
ACETIC ACID-CONTAINING SEASONING LIQUID
An acetic acid-containing seasoning liquid includes acetic acid; at least one free amino acid selected from nine kinds of free amino acid groups consisting of valine, methionine, isoleucine, leucine, tyrosine, phenylalanine, histidine, lysine, and arginine; and a free amino acid other than the free amino acid groups. The acetic acid is contained in an amount of 0.1% by mass or more. A total content mass ratio of the nine kinds of free amino acid groups to total free amino acids is in a range of 0.20 to 0.70. A content mass ratio of the total free amino acids to the acetic acid is in a range of 0.01 to 0.30.
MOUTH-COATING FEEL ENHANCER
Mouth-coating feel enhancers containing a heated substance of the following (A) and/or a heated substance of the following (B), or at least one compound selected from compound group (C) described in the present specification: (A) (A1) a compound represented by the formula (I):
##STR00001##
wherein each symbol is as defined in the present specification, and (A2) at least one selected from the group consisting of an aliphatic aldehyde having 3 to 14 carbon atoms, an aromatic aldehyde having 7 to 12 carbon atoms, an aliphatic alcohol having 3 to 12 carbon atoms, and a substance that produces at least one of these compounds by heating (B) at least one compound selected from the group consisting of β-caryophyllene and a β-caryophyllene analogous compound are effective as mouth-coating feel enhancers and coffee-roasting sensation enhancers.
PROFLAVOR DELIVERY PARTICLES
Provided herein are flavor particles containing encapsulated precursors of acetaldehyde. Also provided herein are methods of making and using the particles.
COOLING SENSATION COMPOSITIONS
A liquid compositions comprising at least one non-natural cooling compound and lactic acid, and the use of said composition in a flavour or fragrance composition.
Compositions and methods for improving taste of non-nutritive sweeteners
The present disclosure provides a novel sweetener composition of improved taste of the sweetener (e.g., reduced bitterness and/or astringency, and improved overall sweet quality of the composition); food and beverage products containing the same; and methods of making the same.
COOLING SENSATION COMPOSITIONS
Compositions comprising at least one cooling compound and a solvent, and the use of said composition in a flavour or fragrance composition.
Odorants and compositions comprising odorants
The present invention relates to new classes of odorous oximes and their ketone intermediates (odorants) which are useful as fragrance or flavor materials in particular in providing cassis, catty, tropical, green, coniferous, thuya, floral and/or fruity olfactory notes to perfume, aroma or deodorizing/masking compositions.
FLAVOUR COMPOSITIONS FOR IMPROVING TASTE IMPRESSIONS
The present invention relates to new flavour compositions, a method for producing such flavour compositions, the use of such flavour compositions for enhancing and/or imparting desired taste impressions and/or for reducing and/or masking undesired taste impressions, as well as to a product or semi-finished product comprising such a flavour composition. Furthermore, the present invention relates to the use of a sugar composition in the preparation of such a flavour composition.
