The composition of the present invention has enhanced properties of ease of use in various applications, especially in food applications, in a wide range of temperatures and has enhanced setting time properties. The present invention further relates to an improved process for making said Composition and to uses of said composition in food applications, in pharmaceutical applications, technical and in pet food applications. The present invention is particularly useful in the preparation of food applications such as confectionery products and various types of desserts.

The present invention is directed to functional food compositions comprising collagen. In one embodiment, the invention relates to a collagen and nut protein blend, wherein the composition is a solid or semi-solid that is shelf-stable and has a soft texture. The present invention also includes compositions with other nut protein blends, and compositions that further do not contain gluten. A method of making the compositions of the present invention is also claimed.

Methods and industrial scale set-ups for manufacturing spray-dried powders are provided. During the process, a solvent is used. The process is done batchwise such that the emulsification mass ratio is low when removal of the solvent is started. Preferred solvents are isopropyl acetate and ethyl acetate.

GELLING COMPOSITION AND FOOD CONTAINING THE SAME

Provided is a gelling composition capable of keeping a gel state in a food even when the food heated at 75° C. is cooled to around 45° C. at which the food can be eaten in a warm state. Specifically provided is a gelling composition comprising methyl cellulose, a 2.0% by weight aqueous solution of which has a storage modulus G′ (75° C.) at 75° C. of 3,000 to 5,500 Pa, the 2.0% by weight aqueous solution of which has a return temperature storage modulus G′ (75 to 45° C.) of 2,000 to 3,600 Pa when the temperature of the aqueous solution is returned from 75° C. to 45° C., and a 2.0% by weight aqueous solution of which has a viscosity at 20° C. of 3,000 to 10,000 mPa.Math.s; a low temperature gelling agent; and a solvent. A food comprising the gelling composition is also provided.

MICRONIZED HYDROPHILIC CROSS-LINKED BIOPOLYMER SYSTEMS AND METHOD OF MAKING SAME

Disclosed are micronized hydrophilic systems of highly concentrated, cross-linked biopolymers. The system is created by combining a biopolymer with a cross-linking agent under mechanical kneading and allowing the biopolymer to undergo a cross-linking process followed by purification, drying and milling. The resulting micronized biopolymer system has an increased biopolymer concentration and increased longevity within the body.

The application describes comestible products comprising a water-in-oil emulsion, the water-in-oil emulsion comprising cocoa butter and a fat-crystal stabilised aqueous phase dispersed substantially through the cocoa butter continuous phase and optionally one or more additional ingredients of chocolate. Hydrocolloids, such as gelative or carrageenan are typically used to stabilise the aqueous phase. Methods of making comestible products are also provided.

EDIBLE PRODUCTS

The present invention relates to edible products, suitable for use as confectionery and having therapeutic uses. We describe a composition for the preparation of an edible product, the composition comprising 0.2 wt. % to 3 wt. % of at least one polysaccharide gelling agent, the balance being water. In preferred composition, the at least one polysaccharide is at least one of agar, pectin, locust bean gum, gellan gum and carrageenan. The compositions preferably comprise 0.5 wt. % to 2.00 wt. % agar and 0.05 to 1.0 wt. % of a galactomannan polysaccharide; the balance being water; preferably wherein the galactomannan polysaccharide is present in an amount of from 10% to 40% the amount of agar.

A gelatin based substrate containing a milk based product and gelatin substrate mixture is chilled forming a first gelatin and milk based substrate layer which is paintable with oil and natural vegetable gum based edible paint or colorant. Additional layers can be prepared comprising a selected gelatin or gelatin containing flavored ingredients such as fruit or berries or combinations thereof forming a bi-layer or multi-layer low calorie dessert product. The multi-layered product is inverted leaving the first gel and milk based substrate as the top layer of the finished dessert product which may be painted with oil based edible coloring agent including an edible paint, edible dye, edible soluble ink, and combinations thereof. The gelatin and milk based substrate can also be used to prevent bleeding or migration of colors between different colored gelatin layers.

Systems and methods for flavoring and lubricating food items and cooking surfaces

Edible sheets for use in the preparation of food products are disclosed. The edible sheets include at least one flexible or semi-rigid membrane or layer of a base material having particles of one or more functional materials, such as lubricants or flavoring additives, dispersed therein. The edible sheets are configured to undergo a transformation and release the functional materials onto a cooking surface or surface of a food item upon satisfaction of one or more predetermined conditions, allowing for consistent and controlled delivery of the functional materials. The edible sheets may be effective to flavor a food item before, during, or after cooking, and/or may be effective to lubricate a food item or cooking surface.
