Natural honey and a surfactant are combined to achieve a novel wound treatment composition. The honey is chosen for its medicinal properties, and the surfactant is used for biofilm removal to enhance the effectiveness of the honey. In preferred embodiments, the honey is a tropical honey currently sourced from Mexico. The surfactant is mixed with water, then the aqueous mixture is combined with the honey. In accordance with a preferred embodiment, a surfactant powder is mixed with water at a ratio of 10% powder to water, then that mixture is combined with honey at a ratio greater than 50:50, more preferably at a ratio of 90:10. The currently preferred surfactant is Poloxamer 188. The product may be applied directly to a wound or applied to wound dressings including, without limitation, gauze, gauze rolls, hydrocolloids, and calcium alginate dressings.

The present disclosure provides a wound dressing composition comprising cross-linked hydrogel scaffold and embedded therein anti-bacterially active honey, said activity being determined by the detection of hydrogen peroxide production rate by said wound dressing; said wound dressing further comprising at least one of a photo-initiator and/or at least one UV cross linker, the total amount of said photo-initiator and/or UV cross linker is equal or less than 0.2% w/w out of the total weight of the wound dressing. Also disclosed herein is a method of preparing the wound dressing and methods of using the same with respect to wounds, the method of preparation comprises mixing a hydrogel forming mixture comprising hydrogel forming monomer or monomers, honey and at least one photo-initiator and/or at least one UV cross-liker to form a homogenous mixture; and subjecting the homogenous mixture to UV irradiation until said homogenous mixture solidifies.

A method of treating a human suffering from an infection caused by a pathogen, the method comprising: administering to the human in need thereof a therapeutically effective amount of a composition comprising a fractionated honey, wherein the fractionated honey is produced from Leptospermum scoparium; wherein the fractionated honey does not undergo yeast fermentation normally associated with honey at moisture contents greater than 19% water by weight; and wherein the composition comprises between 19 weight % and 99 weight % water, and has a water activity of between 0.85 and 1.0, a pH between 3 and 4.5.
