The invention relates to a composition of peptides having an aminogram in which: glycine, hydroxyproline and proline are in molar quantities such that the ratio of each quantity to the sum of the molar quantities of the amino acids in the composition is comprised between 20.0% and 24.5%, between 6.0% and 12.0% and between 10.6% and 14.6%, respectively; the peptide composition comprising a quantity of peptides with a molecular weight lower than 1400 Da such that the ratio of said quantity to the quantity of peptides in the composition is less than 40%; the molecular weight and the quantity of peptides in the composition being determined by exclusion chromatography. The invention likewise relates to such a composition to be used as a drug. The invention further relates to such a composition to be used as a food supplement.
Cartilage product
The present invention relates to a method for preparing a cartilage product comprising a protein hydrolysate with a degree of hydrolysis comprised between 0.5% and 3.0%, at least one glycosaminoglycan and at least one growth factor. The present invention also relates to the cartilage product obtainable through said method. Said cartilage product is useful in the treatment or prevention of wounds, ulcers, burns, psoriasis, osteoarthritis, synovitis, osteoporosis, osteopenia, diseases of the tendons and ligaments, periodontal diseases, signs of skin aging, the harmful effects of ultraviolet radiation exposure or stretch marks.
METHOD OF PRODUCING GELATINE USING CUTTING DEVICE
The present invention relates to a method of producing gelatine, the method comprising the steps of: providing animal material containing collagen; cutting the animal material with at least one fluid cutting jet to form animal material sections; hydrolysing the collagen in the animal material sections to form gelatine; and isolating the gelatine. The invention also relates to a fluid jet cutting device and to the use of a fluid jet cutting device in the production of gelatine. The invention is particularly useful in the production of gelatine from pig skin and/or cow hides and/or fish skin.

The composition of the present invention has enhanced properties of ease of use in various applications, especially in food applications, in a wide range of temperatures and has enhanced setting time properties. The present invention further relates to an improved process for making said composition and to uses of said composition in food applications, in pharmaceutical applications, technical and in pet food applications. A turkey collagen hydrolysate composition is prepared from turkey collagen sources, wherein the composition has: a protein concentration of from about 80 wt % to 100 wt %; a protein molecular weight distribution wherein from about 80% to 100% of the protein in the turkey collagen hydrolysate composition has a molecular weight of from about 500 to about 15,000 Daltons; a protein solubility of from about 97% to 100% at a pH selected from the group consisting of pH 7.0, pH 3.4, pH 5, and all of pH 7.0, pH 5, and pH 3.4; and a protein amino acid content of 3 to 25 glycine (g/100 g sample), 0.5 to 15 hydroxyproline (g/100 g sample), 1 to 18 proline (g/100 g sample), 0.02 to 4 taurine (g/100 g sample), and 0.05 to 3 tryptophan (g/100 g sample). Methods of preparing turkey collagen hydrolysate compositions are described.
