Process for improving shelf-life of fresh cut vegetables and food products produced thereby
The present disclosure relates to, inter alfa, processes for improving shelf-life and flavoring of fresh-cut/fresh vegetables, as well as food products produced by these processes. In accordance with the present disclosure, the processes generally include various new combinations of steps such as blanching, air drying, supercritical fluid processing with and without a processing aid, pressurization, de-pressurization, and packaging. The present disclosure further relates to methods of preparing edible food products that incorporate the processed fresh-cut vegetables, as well as the food products produced by these methods.
METHOD OF PRODUCING ANIMAL FAT SAUCE BY EMULSION WITH A HIGH-SHEAR MIXER
Producing sauce (e.g., mayonnaise) using animal fat on a commercial scale to obtain the quantity, quality, and life of traditional commercial-grade sauce made with common fruit, nut, seed, flower, and vegetable oils. An industrial-grade emulsifying machine such as a high-shear mixer is utilized to ensure that the animal fat particles are made sufficiently small to produce a good emulsion. An anti-rancidity or antioxidant (e.g., vitamin E, rosemary oil extract (ROE), bovine casein hydrolysate (BCH)) is utilized to prevent the animal fat from becoming rancid and enabling longer shelf life. The animal fat offers many benefits over traditional fruit, flower, nut, vegetable, and seed oils including being cheaper and more plentiful commercially, better-tasting and health benefits, including anti-carcinogenic properties.

The present invention relates to a composition comprising or consisting of a synergistic combination of an effective amount of antimicrobial component and an effective amount of 1,2-heptanediol and/or 2,3-heptanediol or of a specific alkanediol or a mixture of two or more different specific alkanediols. Additionally, the present invention relates to the use of 1,2-heptanediol and/or 2,3-heptanediol or of a specific alkanediol or a mixture of two or more different specific alkanediols in an effective amount for boosting the efficacy of an antimicrobial active component. The present invention relates to an environment-friendly, safe and non toxic vegetable and fruit wash composition and its use. The vegetable and fruit wash composition of the present invention ensures removal of dirt, microorganisms, pesticides and/or insecticides from the surfaces of fruits and vegetables. The present composition is also effective in preventing early fruit ripening, crown-rot disease and fruit blackening thus contributes towards extending the life of the fruits/vegetables.
