An emulsion system is provided. The system includes a shaft that supports a plurality of cutting assemblies and screens in alternating order, wherein the cutting assembly rotates with respect to an in close proximity to the screen. The cutting assemblies include a plurality of cutting elements that extend radially outward from a hub and are positioned at consistent radial spacing along the perimeter of the hub. Each cutting element includes front and back edges that cut food particles in conjunction with holes within the screen, wherein the front and back edges are substantially perpendicular.

Separator for a food-product grinding machine with ring adjustment

A grinding machine for grinding food-products, such as meat or the like, includes an orifice plate at the outlet of a grinding head. The orifice plate has collection passages that discharge a mixture of soft material and hard material through the orifice plate. A separator assembly, including a separator screw and separation chamber, is located downstream of the orifice plate for separating the soft material from the hard material. A ring adjustment assembly includes a ring valve having an internal conical portion in communication with a nose portion of the separator screw, and a ring valve carrier configured to reciprocally displace the ring valve in an axial direction relative to the separator screw so as to vary a gap between the nose portion of the separator screw and the internal conical portion of the ring valve. Adjustment of the gap distance determines an amount of the hard material that is passed toward the discharge outlet.

A method to grind meat in a grinder, includes: providing the meat to the grinder via a hopper where the hopper includes a feeder worm for feeding the meat to a process unit. The process unit has a rotating processing worm and a cutting set. The rotating processing worm can receive the meat from the feeder worm and convey it to the cutting set, which grinds the meat. The method involves automatically adjusting the revolutions per minute of the rotating processing worm in response to a pressure creation in the process unit.

Grooved chamber for a food-product separation machine

A separation assembly for a food product separating machine configured to separate meat product from bone product includes a separation chamber defined by a circumferential side wall, a longitudinal axis, and a radius. The separation chamber includes a plurality of apertures disposed in the circumferential side wall and at least one V-shaped groove disposed along an inner surface of the circumferential side wall. The V-shaped groove is defined by a vertex and an angle bisector of the vertex and is formed in an inner surface of the chamber.

Cutting device; separator; method for separating food components by means of a separator

A cutting device, a separator and a method for separating food components using a separator compensates the effects which an increasing wear on a cutting tool arranged on a rotating body have on comminuting a foodstuff by movably arranging the cutting tool on the rotating body.
