Knife replacement tools and methods of using the same to remove knives from machines
Tools for replacing knives in cutting machines. The tools include a clamping body having a base, bracket, clamp, and knife support tab(s). The bracket has a flange portion spaced apart from an upper surface of the base. The clamp is coupled to the base for translating in translation directions transverse to a longitudinal axis of the base. The clamp has a lift tab on the same side of the base as a rear surface thereof, and a handle is secured to the flange portion of the bracket and located on the same side of the base as the lift tab. The support tab projects from the front surface of the base, and the clamp is biased toward the support tab so that the clamp and support tab create a knife gripping mechanism for clamping an edge of a knife against the tab.

A method of adjusting a rake-off angle in a centrifugal cutting head includes mounting a plurality of cutting stations on a rim structure with a gap between adjacent cutting stations, each cutting station holding a cutting element at a leading end of the cutting station and comprising an inner surface extending from the leading end to a trailing end forming a product sliding surface along which food product slides between successive cuts; and adjusting the rake-off angle by adjusting a rear part of the product sliding surface at a trailing end of at least one cutting station without changing the leading end.
Cutting heads, cutting machines equipped therewith, and methods of operation
Cutting heads and machines equipped therewith. The cutting heads include axially-spaced annular-shaped structural members and circumferentially-spaced support segments between the structural members. Each support segment has a leading edge and a trailing edge, a knife support surface defined on an inner surface region adjacent the leading edge of the support segment, and a gate located adjacent the trailing edge of the support segment. A knife assembly is located adjacent the leading edge of each support segment. Each knife assembly includes a holder opposing one of the knife support surfaces of the support segments and adapted to clamp a knife between the holder and knife support surface. The cutting head may further have camming units that secure the support segments between the structural members, camming units that clamp the knives to the knife support surfaces, and/or adjustment pins that deflect the gates of the support segments.

A plant-trimming apparatus comprises two spaced-apart end plates, a rotatable tumbler, a rotatable reel comprising a reel shaft and reel blades, two bearing blocks, each detachably connected to a respective end plate and rotatably supporting a respective end of the reel, a motor arranged to drive the reel and the tumbler, a bed bar assembly comprising a bed bar and a bed knife, the bed knife being in operative engagement with the reel blade for cutting of plant material from the tumbler, and a manually-operated locking mechanism operable to secure the bearing blocks and the bed bar assembly to the end plates. The apparatus can be easily disassembled for cleaning and re-assembled, without using tools.
Knife assembly for flat knife blade and cutting system equipped with same
A knife assembly including a flat knife blade, a holder, a clamp arranged for clamping the knife blade onto the holder, and a fastening mechanism for securing the knife blade between the clamp and the holder. The clamp has clamping parts along a clamping line rearward from the front edge. The clamp includes clamping geometrical elements, corresponding to complementary contact geometrical elements of the knife blade, positioned at least in part at a different distance from said front edge than the clamping line. The clamp engages the knife blade along the clamping line and at the corresponding contact geometrical elements.
Knife assembly and cutting system equipped with same
A knife assembly comprising a knife blade of which a front edge is a cutting edge, a holder configured for supporting the knife blade, a clamp arranged for clamping the knife blade onto the holder, and a fastening mechanism cooperating with the clamp and the holder for securing and clamping the knife blade between the clamp and the holder with the cutting edge protruding at a front side of the knife assembly. The holder has a frontal part which is, in clamped state, in contact with a bottom side of the knife blade at a first distance from the cutting edge. The clamp has a leading edge which, in clamped state, clamps onto a top side of the knife blade and is located a second distance from the cutting edge, the second distance being smaller than the first distance. A cutting apparatus comprising at least one such knife assembly.
Manufacture of vegetable chips
An apparatus for cutting vegetable slices that includes a central impeller coaxially mounted with a cutting head for rotation about an axis within the cutting head for delivering vegetables radially outwardly from a center of the impeller toward the cutting head. A water jet spray device is mounted at the base of the impeller, aligned with the axis, and includes a raised mound having an outer wall surrounding an inner wall defining a central depression, the outer wall extending downwardly and outwardly from an annular rim between the central depression and the outer wall, and a plurality of substantially radially oriented channels serially provided around the raised mound, each channel extending outwardly from a channel inlet within the central depression to a channel outlet in the outer wall.
Cutting head for a centrifugal cutting apparatus and centrifugal cutting apparatus equipped with same
Cutting head for a centrifugal cutting apparatus, comprising cutting stations, each of which has a cutting element at a leading end and an inner wall extending from the leading end to a trailing end and forming a product sliding surface. The cutting stations are assembled adjacent one another with a gap between each pair of adjacent cutting stations, a rake-off angle .sub.R being defined as the angle that a product slice deviates upon being cut by one of the cutting elements and exiting the cutting head through the respective gap, said angle being measured relative to a tangent line to the product sliding surface at the trailing end of the respective preceding cutting element. A rear part of the product sliding surface at the trailing end is adapted such that the rake-off angle .sub.R is below 17.
Knives and knife assemblies for slicing machines and slicing machines equipped therewith
Knives and knife assemblies for slicing machines and centrifugal-type slicing machines equipped therewith. Such a knife includes a cutting edge and an opposing edge oppositely disposed from the cutting edge. The cutting and opposing edges extend along a longitudinal length of the knife, and the knife has a handle at a longitudinal end of the knife. A transition region is between the cutting edge and the handle, and the transition region has a minimum lateral width of roughly one half of a lateral width between the cutting and opposing edges of the knife, with the result that a portion of the knife that laterally extends beyond the transition region is up to roughly half of a lateral width of the knife between the cutting and opposing edges.
MODULAR UNITS, CLAMPING ASSEMBLIES, AND SLICING MACHINES EQUIPPED THEREWITH
A modular unit configured for mounting to a cutting head of a slicing machine and for securing a knife to the cutting head, and slicing machines equipped with one or more of such modular units. The modular unit includes mounting blocks adapted to be spaced apart in an axial direction of the cutting head, and a clamping assembly assembled with the mounting blocks so as to extend between the mounting blocks. The clamping assembly is configured to secure a knife to the cutting head, and at least portions of the clamping assembly may be removable from the cutting head by disassembling the clamping assembly from the mounting blocks without removing the mounting blocks from the cutting head.
