BEER-MAKING DEVICE USING CONTACTLESS FERMENTATION DEGREE-MEASURING METHOD, AND CONTROL METHOD OF BEER-MAKING DEVICE
The present invention relates to a beer-making device which allows to produce beer, in which yeast is alive, directly on the ground for sale without expert knowledge and can produce various kinds of beer at once, automatically, cheaply and easily, without the possibility of contamination due to contact with the external environment. The beer-making device according to an embodiment of the present invention may comprise: a chamber in which a keg containing wort is mounted; a cold air supply device for supplying cold air into the chamber; a fermentation device for fermenting the wort contained in the keg mounted in the chamber; a weight sensor for detecting the weight of the keg containing the wort; a fermentation degree-measuring unit for measuring the specific gravity (G) of the keg containing the wort from a change in the weight of the keg containing the wort detected by the weight sensor; and a control unit for controlling the internal temperature of the chamber by controlling the cold air supply device, and for controlling the fermentation of the wort contained in the keg mounted in the chamber by controlling the fermentation device, all according to the specific gravity (G) of the keg containing the wort measured by the fermentation degree-measuring unit.
Clarified fermented beverages, and a method thereof
A system and method in a process for making a fermented beverage (FB), such as a bright beer, and producing a clarified FB, using a caustic dosing system to neutralize naturally-present organic acids typically present in a the fermented beverage (such as a bright beer) to the salt forms of the organic acids, and removing or separated the salts to form the clarified fermented beverage or clarified bright beer.

The present invention relates to a beer manufacturing device configured such that it is possible to directly produce and sell beer, the yeast of which is alive, on the spot without any expertise, and it is possible to easily manufacture various kinds of beer automatically at a low cost through a single session without a concern that the same will be contaminated by contact with the outside. A beer manufacturing device according to an embodiment of the present invention comprises: a machine room comprising a cooling device for generating cold air and a cold air storage portion for storing the cold air generated by the cooling device; a fermentation chamber having a plurality of chambers having independent spaces such that kegs that contain wort are mounted therein; and a support portion for supporting the machine chamber and the fermentation chamber. The fermentation chamber may comprise a cold air supply device for supplying the cold air stored in the cold air storage portion into the chambers, and a fermentation device for fermenting the wort contained in the kegs mounted in the chambers.
System and method for cleaning wine and/or a barrel containing wine
There is disclosed a system and method for processing wine and/or a containing barrel, while keeping a volume of most of the wine in the barrel. The disclosed system and method can provide reduced mixing of different layers of wine in the barrel. An optional scrubbing mechanism cleans an interior surface of the barrel from encrusted matter, and an optional UV sterilization light source sanitizes an interior surface of the barrel that is alongside a cavity in the barrel empty of wine. In some embodiments a pumping and filtering system preserves non-mixing flow of wine in the barrel while effectively filtering wine optionally without the use of a filter cartridge or other interposing medium.

A beer manufacturing device according to an embodiment of the present invention may comprise: a chamber; a coupler fixedly installed in the chamber, the coupler comprising a wort channel and a gas channel; a channel portion connecting the wort channel and the gas channel of the coupler; a sterilizing/washing cap coupled to the coupler such that the channel portion becomes a closed channel; a sterilizing/washing filter container connected to the channel portion, sterilizing/washing water being stored in the sterilizing/washing filter; a pump connected to the channel portion; and a control portion for controlling the operation of the pump such that the sterilizing/washing water stored in the sterilizing/washing filter container circulates through the channel portion that has become a closed channel.
Accelerated Maturation Process (A.M.P.) device
An accelerated maturation process (A.M.P.) device that continually cycles a base liquid from a holding tank through a maturation chamber and returns the maturing base liquid to the original holding tank. The maturation chamber additionally includes the ability to hold various permeable mediums to infuse the base liquid with the flavor profile of the permeable medium during operation of the accelerated maturation process device.
METHOD OF PRODUCING BEER HAVING A TAILORED FLAVOUR PROFILE
A method of producing beer having a tailored flavour profile is provided comprising the successive steps of: (a) fermenting wort containing fermentable sugars with yeast to produce beer containing 1-10 vol. % ethanol and flavour substances diacetyl; acetaldehyde; dimethyl sulfide; ethyl acetate; isoamyl acetate; ethyl valerate; ethyl hexanoate; iso-amyl alcohol and 2-methylbutan-1-ol; (b) contacting the fermenting wort or beer with porous adsorbent particles, selectively adsorbing the beer flavour esters ethyl acetate, ethyl hexanoate, ethyl valerate and isoamyl acetate; (c) separating the adsorbent particles; (d) desorbing a portion of the beer flavour esters from the adsorbent particles; and (e) adding a fraction of the desorbed beer flavour esters to the flavour adjusted beer or to another beer, wherein the amount of beer flavour esters added is 5-95 wt. % of the amount of beer flavour esters removed by the adsorbent particles.
METHODS OF MAKING MODIFIED ALCOHOL CONTAINING PRODUCTS
Certain embodiments of the invention provide a method of preparing a modified distilled alcoholic spirit, comprising contacting a corresponding starting distilled alcoholic spirit with a base under conditions that cause at least one free carbonyl compound in the starting distilled alcoholic spirit to be reduced, to provide the modified distilled alcoholic spirit that has at an alcohol by volume (ABV) of at least 15%. Certain embodiments also provide a modified distilled alcoholic spirit prepared by the methods described herein.

Sediment-Trapping Bottle Cap
A sediment-trapping bottle cap for removing solids such as sediment from homemade beer, wine, or other liquids with impurities. The bottle cap uses a collection receptacle that rotates gravitationally. The sediment-trapping bottle cap is generally used with a container such as a standard or specially-made bottle. The cap includes a cap body that houses a receptacle, which can rotate gravitationally within the cap when it is inverted or otherwise not upright. The cap can be removed and any settled sediment can be discarded.
