Method for producing lactase-containing composition
A method for producing a lactase-containing composition which is purified by selectively removing protease contaminating the lactase using simple and easy means; a lactase-containing composition; and a dairy product containing the lactase-containing composition. A method for producing a lactase-containing composition having a reduced protease content includes: dissolving a composition containing lactase and protease in an aqueous salt solution having an electric conductivity of from 2 to 45 mS/cm; bringing the resultant solution into contact with an ion exchange resin; and collecting a fraction which is not adsorbed onto the ion exchange resin.

The present invention has a purpose of providing a novel β-galactosidase enzyme useful for the production of oligosaccharides. Disclosed is a β-galactosidase enzyme comprising the amino acid sequence of any one of SEQ ID NOs: 1 to 4 or an amino acid sequence that is 80% or more identical to said amino acid sequence.

A process for producing ethanol from lactose containing substrates, comprising simultaneously saccharifying the substrate to produce monosaccharide and fermenting the monosaccharide to produce ethanol at a pH from 3.5-5.5, using a fermenting organism, wherein saccharification is carried out in the presence of a lactase, and wherein the fermenting organism is a Saccharomyces sp., and the ratio between the incubation time required for obtaining at least 90% hydrolysis of the lactose present in the substrate (t-.sub.1) and the total fermentation time (t.sub.2) is in the range of 0.1 to 1, and the Saccharomyces sp. is added in amounts that will result in an ethanol yield of at least 70% w/w of the theoretical ethanol yield from lactose by the end of fermentation.

The present invention provides a multi-component enzyme system that hydrolyzes hemicellulose oligomers from hardwood which can be expressed, for example, in yeast such as Saccharomyces cerevisiae. In some embodiments, this invention provides for the engineering of a series of biocatalysts combining the expression and secretion of components of this enzymatic system with robust, rapid xylose utilization, and ethanol fermentation under industrially relevant process conditions for consolidated bioprocessing. In some embodiments, the invention utilizes co-cultures of strains that can achieve significantly improved performance due to the incorporation of additional enzymes in the fermentation system.
