SPIRAL CONVEYOR THERMAL PROCESSING SYSTEM

A thermal processing apparatus includes a conveyor belt for supporting work products during thermal processing that moves along a spiral path moving in a first direction arranged as a first tiered stack and then moves along a spiral path in a second direction arranged as a second tiered stack. A circulation system induces gaseous thermal processing medium from the tiers of the first and second spiral conveyor belt stacks and forces the thermal processing medium through a heat exchanger and then back to the tiers of the spiral conveyor belt stacks. The first tiered stack is divided into a first processing zone and a second processing zone, and the second tiered stack is divided into a third processing zone and fourth processing zone. A source of thermal processing medium is directed at the first processing zone to thermally treat the work product in the first zone by enhanced heat transfer. Optionally, a source of thermal processing medium is directed at the fourth processing zone to complete the thermally treatment the work product.

In a general embodiment, the present disclosure provides heat exchangers having an open chamber configuration and including a first section containing a cooling or heating media and a second section containing a food product. The first section includes a level detecting device that is configured to maintain a level of cooling or heating media in the first section, while preventing the cooling or heating media from pressurizing the first section. The open chamber configuration provides an air break at a top portion of the first section that ensures that the cooling or heating media entering the first section is at, or close to, atmospheric pressure.

An apparatus and a method for freezing foods includes a first conveyor having one end thereof located on the feed portion and that conveys the articles to be frozen in a first direction and a second conveyor extending directly beneath the first conveyor along thereof and conveying foods fallen from the other end of the first conveyor in a second direction opposite to the first direction. The apparatus further includes a coolant tank disposed beneath the second conveyor and storing coolant that freezes foods fallen from the second conveyor, a third conveyor having at least one portion thereof submerged in the coolant in the coolant tank and conveying the foods fallen from the second conveyor while immersing them in the coolant, and a coolant spraying means disposed above the first conveyor and spraying coolant toward the first conveyor.

COOLING DEVICE FOR FOOD PRODUCTS

A cooling device for products disposed in an arrangement including an elongate plenum having a length that approximates the transverse dimension of the arrangement and a passageway extending from its first end to its second end. A structure coupled to the elongate plenum is adapted for positioning the elongate plenum across arrangement. A blower is coupled to the first end of the elongate plenum for providing a pressurized fluid to the passageway. The elongate plenum has a substantially continuous nozzle extending along its length for directing pressurized fluid from the passageway for travel over a side wall of the plenum towards the arrangement. The side wall has a configuration so that the pressurized fluid traveling over the side wall entrains fluid external of the elongate plenum for amplified cooling of products in the arrangement.

Method and apparatus for producing frozen products

The invention relates to a method of producing frozen products in which a predetermined amount of carbon dioxide snow is produced and piled up to form a volume of snow. Subsequently, a mold impression is pressed into one surface of the snow volume, forming depressions into which at least one product to be cooled is filled. In a cooling device, the product in the snow volume is cooled through, while the snow volume itself gradually sublimates. The process and the device are particularly suitable for the production of individual quick freezing (IQF) products.

A method and associated equipment for obtaining a product in the form of deep-frozen, dissolved-gas-rich granules, particles or beads from a liquid, semi-liquid or pasty matrix, comprises the following steps: gasification of the matrix by incorporating a gas; dispensing the matrix in the form of drops; and cryogenically freezing the matrix drops by immersion in a cryogenic fluid. The step of gasification of the matrix involves dissolving a large amount of the gas generated by the evaporation of the cryogenic fluid in the drops by increasing the number of gas molecules in a high gas density zone, called high molecular density zone, located above the surface of the cryogenic fluid and on the path of the matrix drops before they are immersed in the fluid.

The invention relates to a continuous process for freezing a flow of aqueous material in liquid form and moving the aqueous material through at least one tube from an inlet of the tube to an outlet of the tube so as to form a breakable or cuttable frozen extrusion without bursting the tube. The process creates an extruded material that comprises liquid aqueous material entrapped between frozen aqueous material to self-lubricate the extrusion as it moves through the tube. An apparatus for carrying out the process of the invention is also provided.

Method for determining the temperature of products transported on the conveyor belt of a cryogenic tunnel, comprising the following steps: continuously measuring the surface temperature of products travelling on the conveyor belt; measuring the thickness of a product at the point where the temperature measurement is taken; performing the following evaluation: a. when the thickness of the product is within a certain range, then the temperature measured for said product is considered to be a reliable value; b. when the thickness of the product is outside the range, then the last temperature value of the measured product is considered to be a reliable value according to paragraph a) above; c. after a determined period of time during which the measured thickness is outside the range, it is concluded that there are no products on the conveyor belt and the temperature measurements are no longer taken into account.
