Methods of evaluating a surfactant may include ultrasonicating a mixture of oil, water, and the surfactant to form at least one of the following: a sub-macroemulsion, a macroemulsion phase or a combination of the aforementioned; separating the sub-macroemulsion from the macroemulsion phase; introducing the sub-macroemulsion into a foam container; performing a first automated phase identification of the sub-macroemulsion; introducing a gas into the sub-macroemulsion to generate a column of foam, where the column of foam has a height in the foam container; performing a second automated phase identification of the sub-macroemulsion; and measuring the height of the column of foam in the foam container. In these methods, the first and second automated phase identifications may be configured to quantify one or more liquid phases and a foam phase in the column.

Each aerator of the one or more aerators comprises an orifice through which the expansion gas enters the manifold, and wherein the orifice of each aerator is sized to enable generation of a meta-stable detergent based foam having bubbles with bubble diameters within a range of 10 microns (3.9×10.sup.−4 inches inches) and 5 millimeters (0.2 inches), having a half-life within a range of 5 minutes and 180 minutes, or a combination thereof.

The invention relates to an apparatus for aerating a pasty product. The apparatus comprises a housing (1) with an inlet (4) for the pasty product to be aerated and an outlet (5) for the aerated product.

The apparatus comprises at least a first set of a rotor and a stator (21) and a second set of a rotor and a stator (22). The apparatus further comprises a gas injector (6) for injecting, upstream of the first set of a rotor and a stator (21), a gas into the pasty product to be aerated.

The apparatus further comprises an intermediate mixing chamber (7) provided in the housing between the first and the second sets of a rotor and a stator (21,22). A secondary product introduction means protrudes into the intermediate mixing chamber (7) so as to issue into said intermediate mixing chamber (7).

A method for aerating a pasty product is also provided.
