Disclosed herein is a method for generating capsules with a hydrogel matrix. The method includes the steps: providing in a first chamber a dispersed aqueous phase, the dispersed aqueous phase including water and a hydrogel matrix-forming agent, in which the hydrogel matrix-forming agent is configured to form a hydrogel matrix upon exposure to a gelation inducer; providing in a second chamber a continuous oil phase, the continuous oil phase including oil and at least one first surfactant. The first and second chambers are fluidic connected by one or more channels, preferably by micro-channels. The method further includes: guiding the dispersed aqueous phase from the first chamber through the one or more channels into the second chamber to form an emulsion or dispersion of the dispersed aqueous phase in the continuous oil phase and exposing the hydrogel matrix-forming agent to a gelation inducer to form capsules with a hydrogel matrix.

TEXTURED EDIBLE PROTEIN PRODUCT DERIVED FROM INSECT LARVAE OR WORMS

The invention relates to a process and a system for producing a textured edible protein product derived from insect larvae or worms. The process comprises a) reducing the insect larvae or worms in size to obtain a pulp, b) mixing the pulp with a hydrocolloid that gelates with metal cations in aqueous solution to form a protein-hydrocolloid slurry, and c) injecting the protein-hydrocolloid slurry into an aqueous solution of a metal cation with a valency of at least 2 to form the textured edible protein product. In step c) the protein-hydrocolloid slurry is jetted under pressure from outside of the aqueous solution of a metal cation with a valency of at least 2 into the aqueous solution at an oblique angle with respect to a liquid surface of the aqueous solution, thereby producing flakes of the textured edible protein product in the aqueous solution, in which flakes substantially all hydrocolloid has been gelated with the metal cations.

The membrane-forming composition includes pullulan polysaccharide, gellan gum, amino acid moisturizing agent, anti-hygroscopic agent and so on. It is suitable for the fabrication of hard or soft capsules. The membrane-forming composition can gelate without alkali metal ions. It has a high moisture retention rate which makes it not easy to take up moisture and turn soft in high humid environment, and it will not turn yellow during long time storage. Furthermore, the membrane-forming composition is made up of pure natural materials.

A method for forming polymer microparticles is disclosed. The method comprises spraying a liquid comprising a thermally-gelling polymer from a first orifice of a nozzle into air to form gelled microparticles, and collecting the gelled microparticles with a collecting device. The nozzle is positioned to have a central axis of the first orifice at a tilt angle in a range from about 10 degrees to about 170 degrees relative to a direction of gravity. The collecting device comprises at least two collecting units at different distances from the first orifice of the nozzle in a horizontal direction perpendicular to the direction of gravity. Each of the collecting unit is loaded with a liquid collecting medium. A system for forming polymer microparticles is also disclosed.
