Apparatus and method for adjusting the cutting thickness of a food cutting apparatus
An apparatus for cutting food products is disclosed. The apparatus includes a cutting head comprising a cutting tool that is rotatable between a plurality of positions to change the cutting thickness of the cutting tool. The cutting head also includes a biasing element that biases the cutting tool in a position, and a moveable stop configured to cooperate with the biasing element to maintain the first cutting tool at any of the plurality of positions. The biasing element may be a mechanical spring.

TENSION KNIFE FOR CUTTING FOOD PRODUCTS
A tension knife includes an elongate knife body with a thin, flat profile. The tension knife defines first and second mounting points at opposing ends of the knife body. The knife body has a characteristic width across a length of the knife body between the first and second mounting points. The characteristic width of the knife body defines a centerline between a leading edge of the knife body and a trailing edge of the knife body. One or more of the first and second mounting points has a focus between the centerline of the knife body and the leading edge. A frame can be configured to support and tension the tension knife to form a tension knife assembly. Clamp blocks can be used to mount the tension knife to the frame at the first and second mounting points, where one or more of the clamp blocks is configured to rotate with respect to the frame to tension the leading edge of the tension knife.

A tension knife includes an elongate knife body with a thin, flat profile. The tension knife defines first and second mounting points at opposing ends of the knife body. The knife body has a characteristic width across a length of the knife body between the first and second mounting points. The characteristic width of the knife body defines a centerline between a leading edge of the knife body and a trailing edge of the knife body. One or more of the first and second mounting points has a focus between the centerline of the knife body and the leading edge. A frame can be configured to support and tension the tension knife to form a tension knife assembly. Clamp blocks can be used to mount the tension knife to the frame at the first and second mounting points, where one or more of the clamp blocks is configured to rotate with respect to the frame to tension the leading edge of the tension knife.

The holder has a frontal part which is, in clamped state, in contact with a bottom side of the knife blade at a first distance from the cutting edge. The clamp has a leading edge which, in clamped state, clamps onto a top side of the knife blade and is located a second distance from the cutting edge, the second distance being smaller than the first distance.

The cutting stations are assembled adjacent one another onto the rim structure in such a way that a gap is present between each pair of adjacent cutting stations through which a product slice exits the cutting head upon being cut. The cutting head also includes a gap setting mechanism for setting the radial size of the gap by adjusting the radial offset of the trailing end of the respective cutting station with respect to the rim structure.

A plurality of radial flanges extend perpendicularly from the base, wherein each radial flange of the plurality of flanges is discontinuous with the other radial flanges, wherein the central spear and the plurality of radial flanges are adapted to secure a food item in a processing space and in communication with the rotational adapter. A blade is coupled to an operable carriage and is adapted to selectively engage the food item within the processing space to remove at least a portion of the food item.

A plurality of radial flanges extend perpendicularly from the base, wherein each radial flange of the plurality of flanges is discontinuous with the other radial flanges, wherein the central spear and the plurality of radial flanges are adapted to secure a food item in a processing space and in communication with the rotational adapter. A blade is coupled to an operable carriage and is adapted to selectively engage the food item within the processing space to remove at least a portion of the food item.
