Press cover for a cheese mould
The invention relates to a press cover for a cheese mold, particularly for a cheese mold (1, 12) made from metal with a round or polygonal cross section, wherein the shape and dimensions of the press cover (1) match the inner cross section of the cheese mold (1). It should be of simple construction, able to withstand high pressing force, and also satisfy stringent hygiene requirements. This is solved in that the press cover (1) comprises a perforated plate (22) and a frame (30) with is provided on the periphery of the press cover (21), which frame has a movable outer ring (33) arranged on the outside thereof, which ring lies flush against the inner wall of the cheese mold (1, 12) and creates an effective seal therewith when the raw cheese mass is pressed out. The press cover (21) is also provided with a stiffening frame and rib structure (23, 24, 30).

A METHOD AND SYSTEM FOR PRESSING OUT WHEY FROM CURD
A method for pressing out whey from curd is presented. The method comprises receiving a closed casing holding a mould filled with curd, pumping out air from the closed casing such that a pressure force onto the curd can be formed, establishing a connection between a system controller and a casing controller provided in the casing, uploading instructions from the system controller to the casing controller on how to change the pressure during a pressing cycle by opening a valve on the casing, de-establishing the connection between the system controller and the casing controller, and storing the closed casing and executing the instructions uploaded to the closed casing such that whey is pressed out from the curd and a cheese is formed from the curd.

A method and device for handling cheese blocks. Compressed cheese curd is released from the inner wall of a mould and after a turning operation is evacuated from the mould, with the mould rotated, lowered and shaken or blown. A lifting gripper is guided as far as the stop on a pick-up device, and in the mould the cheese block is subjected to a shaking movement. The mould, that is to say, the cassette, is then raised, rotated and guided back into the cassette press, so that the cheese block can be fixed in position on the lifting gripper by a clamping means. The pick-up plunger with the cheese block is then lowered, that is to say, retracted, the lifting gripper is traversed towards a secondary mould for the cheese block, preferably downwards, the clamping means open, and the cheese block is positioned in a secondary mould.

A method and device for handling cheese blocks, which in particular can be assigned to a so-called cassette press with round or cornered cheese moulds. A rapid reloading of cheese blocks can be achieved. Compressed cheese curd is released from the inner wall of a mould and after a turning operation is evacuated from the mould, with the mould rotated, lowered and shaken or blown. Before the shaking or blowing, a pick-up plunger retracts into the mould up to the cheese block; the mould is then raised, rotated and guided back into the cheese press. The pick-up plunger with the cheese block is then lowered and the cheese block is fixed in position on the pick-up plunger by a clamping unit, is swivelled through 180 towards a secondary mould and is guided, i.e. pushed into the latter; the clamping unit is then opened and the pick-up plunger retracts.

A method for placing curd in a mould is presented. The mould comprises a hollow body having a first opening and a second opening, and a lid. The method comprises preparing the mould by placing the lid in an inner space of the hollow body, placing the mould at a curd output, and receiving curd in the mould from the curd output.
