This allows the wine to remain fresh and unoxidized during storage and aging. The apparatus can be used in multiple support containers, such as barrels, IBCs, and tanks. The apparatus has no moving parts and uses disposable contact materials that eliminate washing and water usage. Single-use components ensure sanitary operation and this combined with the elimination of oxygen in contact with the wine produces consistently higher quality product.

The bottle may be supported by a bottle support sleeve that surrounds all but the neck and closure at the bottle opening. The extraction device may be secured to the neck and a needle, such a pair of needles or a two-lumen needle, may be inserted through the closure to inject pressurized gas into the bottle and to remove beverage from the bottle by the needle. The support sleeve may support the bottle during beverage extraction, e.g., by compressing the bottle exterior.

A system prepares and dispenses non gas-infused and gas-infused beverages including a gas source, a pressurizable container connected to the gas source to receive a first flow of gas, a gas infusion tank connected to the gas source to receive a second flow of gas, a first dispensing tap that receives a portion of preprocessed beverage stored in the pressurizable container that flows under pressure from a portion of the first flow of gas to dispense a non gas-infused beverage from the first dispensing tap, and a second dispensing tap that receives gas-infused beverage from the gas infusion vessel to dispense the gas-infused beverage by the second dispensing tap, the gas-infused tank receiving a portion of the preprocessed beverage from the pressurizable container to infuse the preprocessed beverage in the gas infusion vessel with at least a portion of the second flow of gas.
