An epoxidized oil-based surfactant is the reaction product of an epoxidized compound and a primary and/or secondary alkanolamine, wherein the epoxidized compound is chosen from an epoxidized oil, an epoxidized fatty acid, an epoxidized fatty acid ester, and combinations thereof.
