A partition wall may separate first and second parallel portions of the one or more heat transfer ducts. A heat exchanger may preheat fluid entering the one or more heat transfer ducts using heated fluid leaving the heat transfer ducts.

There is also a circuit, associated with the plate, for treating the fumes produced during the food cooking process. The fumes treatment circuit comprises: a hood arranged above the plate, which comprises at least one suction mouth, a filtering unit fluidically connected to the hood, and at least one recirculation outlet fluidically connected downstream of the filtering unit and located near the plate. In this manner, the cooking fumes sucked in through the suction mouth of the hood are treated by the filtering unit in order to obtain a purified flow with a given percentage of humidity. The purified flow is then recirculated towards the cooking surface through the recirculation outlet in order to exert a humidifying action on the foods.

The baking oven includes a main body, lower and upper stones, a heat shield suspending the upper stone above the lower stone, and a heat element emanating heat upward to a rotating flat panel having the lower stone thereon. Convection heat from the heat element moves upward from below the rotating flat panel and past a periphery of the flat panel, channeled by the heat shield to the upper stone, to move along the upper stone, and then down along the heat shield, on the opposite side. With this arrangement, the heat element heats the upper and lower stones with convection heat moving between the lower and upper stones in a side-to-side manner.

The cavity includes a single opening for loading a food item into the cavity. If one of the first food loading section and the second food loading section is located outside of said cavity, then the other of the first food loading section and the second food loading section is located within said cavity. A first cook setting of the oven when the first food loading section is within the cavity and a second cook setting of the oven when the second food loading section is within the cavity are independently controllable. The first food loading section and the second food loading section may be separated by a divider, which prevents heat from escaping from the cavity through the opening.
