The tortilla conveyor transfer system is interposed between the press conveyor and the oven conveyor. The tortilla conveyor transfer system has a first conveyor, a second conveyor, and a controller. The first conveyor is positioned in series with the press conveyor and the second conveyor, and the second conveyor is positioned in series with the first conveyor and the oven conveyor. In operation, the controller controls and varies the speed of the first conveyor and the second conveyor.

A safety auditor is designed to perform opening and closing of every safety switch that is used in an industrial bakery oven. Every pressure sensor can be tested for on and off states. The low gas pressure switch can be vented and the high gas pressure switch pressurized. All thermocouples associated with the high temperature circuits are tripped. Fans are started and stopped over a communications signal or via the hard-wired interface as required to generate the safety testing. Once the safety testing is complete, the results along with time, date, name of tester, pass or fail will be printed out via a small kiosk printer. This ticket can then be filed in an office. As the operation is easy to do and requires little effort, it is much more likely to be performed and therefore safer for the host bakery.

A gas manifold for a convection conveyor oven includes an elongated housing having a wall that at least partially encloses an interior volume; a gas inlet in fluid communication with the interior volume and extending through the wall; a plurality of gas outlets in fluid communication with the interior volume and extending through the wall; a plurality of seat inserts removably coupled with a plurality of gas outlets; a plurality of valve openings formed in the wall and aligned opposite the plurality of gas outlets; and at least one valve removably coupled to the wall and aligned with a first valve opening, wherein the valve is aligned with a first gas outlet and has a first position in which a first seat insert is not in fluid communication with the gas inlet.
